Smooth Buttercream Frosting

Reviewed: Feb. 21, 2014
I found this recipe and made it exactly as written. All I could taste was shortening. That's when I added more vanilla, lemon and even a vanilla bean to mask the shortening taste. Not gonna' happen. Now it tastes like sweet vanilla-lemon shortening. Did I mention that it tastes like shortening?!

Cookie Balls

I found it nearly impossible to dip them in chocolate so I opted to roll them in powdered sugar which worked out better.

Black Bean and Corn Salad II

Reviewed: Dec. 8, 2013
Wonderful flavor the first day! All kinds of things you could do to make it your own.. like add some crumbled feta, or diced chicken or diced jalapeno. Not as good the second day, starts losing its pizzazz.

Insalata Caprese II

Reviewed: Jul. 26, 2008
Good Recipe, but if you want to kick it up to the next level, use Buffalo mozzarella cheese. Found in specialty cheese departments of large supermarkets. Comes from Italy. Good stuff.

Vegetable Feta Rice

Reviewed: Jul. 25, 2008
This was very good! It did need a few changes though. As per other reviewers I added half the onion called for. Instead of vinegar, I used fresh squeezed lemon juice and added fresh, chopped cilantro, minced garlic and basil to taste. Between the warmth of the rice, the tang of the feta, the crunch of the vegetables and the fresh herbs and lemon..there was a party going on in my mouth! Thank you Danielle for a great basic recipe.

Too Much Chocolate Cake

Reviewed: Feb. 2, 2008
I don't know what happened! I made the cake exactly as directed except I baked in my convection oven for 40-45 minutes. It looked beautiful when I first took it out of the oven. An hour later the the middle had collapsed. It was still gooey in the middle. Don't think I'll make it again.

Crispy Orange Beef

Reviewed: Dec. 30, 2007
I doubled the sauce and doubled the orange zest too. Wow! The flavor was intense. My husband thought the flavor was a little too much. I liked it, although it would have been better with less intense orange flavor. Next time I won't double the orange zest. Still better than any take out! Also, only added half of the ginger per other reviews and that was the right thing to do. Otherwise, it would have been overpowering too. The key to crispy, not overcooked beef strips is to make sure your oil is very hot. Also, I took the advice of other reviewers and waited ten minutes after coating them with cornstarch before frying them. Their done after a few minutes. Don't walk away from them!

Finally found a recipe where the Lasagna doesn't fall apart when taken out of the pan. Very good recipe! Thank you.

Kelsey's Favorite Stuffed Green Peppers

Reviewed: Dec. 27, 2007
Excellent recipe....for me after I did some tweaking. I used instant rice to save time and forgo step 1. I also blanched the peppers for 5 minutes in boiling water then plunged them into cold water to stop them from cooking. Added 1 can diced tomatoes and 1/2 t. of coriander, cumin and several dashes of cayenne pepper plus fresh garlic(per other reviewer's suggestions)and it came out very tasty! Season and taste as you go! I also added diced celery along with the onions because we like more crunch in our peppers. I only had to bake them for 20 minutes because of blanching the peppers. Piled cheddar cheese on top after 10 minutes. Mashed potatoes are excellent with these peppers! Thanks for a good basic recipe, Cheryl! Sorry I made so many changes but isn't that what it's all about...making each recipe your own?

Italian Sausage Soup

Reviewed: Nov. 26, 2007
Very good flavor! Suggestion...don't add all of the zucchini, pasta or spinach to the original batch. If you have leftovers they will be very mushy when reheated. Add only enough per meal so that they are firm each time.

Hot Artichoke and Spinach Dip II

Reviewed: Jun. 3, 2007
This was very good. It needed something to give it a little more zing, but wasn't sure what. After reading some of the other reviews, next time I will use sour cream instead of mayo and will add more cayenne pepper. I may also add a splash of lemon juice and minced onion.

Sensational Sirloin Kabobs

Reviewed: Jun. 3, 2007
Very good flavor. Be sure to use a good cut of meat. Anything less and you'll end up with chewy, although flavorful, chunks of meat. Also, I changed the recipe to make 20 servings and there didn't seem to be quite enough marinade so you may want to make more than what the recipe calls for.

Special Deviled Eggs

Reviewed: May 28, 2007
MAKE SURE YOU DRAIN THE RELISH, ONION (IF YOU USE A FOOD PROCESSER)AND THE HORSERADISH! I DIDN'T AND THEY CAME OUT TOO RUNNY TO FILL THE EGGS. I TRIED ADDING MORE YOLK AND EVEN SOME CREAM CHEESE BUT COULDN'T GET THE FILLING THE CONSISTENCY I NEEDED. THE TASTE WAS GOOD THOUGH. WAS IN A HURRY AND DIDN'T THINK ABOUT DRAINING ANYTHING.
