Cream Puffs

Reviewed: Feb. 8, 2014
Agree, remember to poke a hole when they come out of the oven to let the steam out. Otherwise I followed the pastry recipe and it was good. I lightened up the recipe though by using sugar free pudding, 2% milk and fat free cool whip to make the filling lighter. They hit the spot.

Yellow Cake Made from Scratch

Reviewed: May 8, 2013
Made this into cupcakes, made about 16. This cake tastes great even without icing! Happy to find a good scratch recipe. I use my own hens eggs and they are extra large so I only used 2 and that was fine. Making Boston Cream Cupcakes.

Zucchini Brownies

Reviewed: Sep. 6, 2012
This is the fudgy brownie I have searched for years for! Dont need to melt chocolate to get it just so. And yes, its very thick. Only think I will add a little choc syrup next time, not chocolate enough for my guy.

Pennsylvania Coal Region Barbecue

If you omit the ketchup and substitute tomato sauce then you are not making barbeque. I have used homemade ketchup but thats what makes it. Its a Pa Dutch recipe often made in large batches for gatherings.

Followed advice and used more flour and baking soda, refrigerated the mix. Still they were pretty flat but chewy and delicious. I will use this recipe again.

Pizza Crust I

Reviewed: Jan. 13, 2012
my go to recipe for pizza crust or stromboli. You do have to check on it after a few minutes and you may need a few more drops of water or oil. Sometimes its just too dry, dont know why. I also add in some garlic Mrs Dash for some extra flavor. Nice stretchy dough.

Baked Corn Pudding

Reviewed: Jun. 22, 2011
Baked corn is one of our staples but I do it a little different. I replace the sugar with 2 tablespoons of honey and add 1/4 cup of cornmeal. The honey adds a different kind of sweetness everyone loves and the cornmeal gives it nice texture. A pinch of parsley gives it color.

Graham Cracker Cream Pie

You do need to cut the milk back to 3 1/2 cups to make it firmer. Make this kind of pie all the time, great with banana pudding and sliced bananas.

Alfredo Light

Reviewed: Jan. 18, 2011
I have been making alfredo like this for a couple years since I saw Rachel Ray do it. Its not quite as rich as traditional but its tasty and a great way to have something I like without all the fat and calories. Ive even started replacing some of the milk in my mac and cheese with broth and its so much better.

Brown Sugar Cake

very nice change of pace, not just a regular yellow or chocolate cake. I used a purchased vanilla icing and we loved it. Has a nice crust on top making it easy to ice.

Chocolate Eclair Dessert

I made it in a 8x8 square and cut the recipe in half. Also it is important to note you should microwave the iceing to soften it up. its been mentioned several times here and makes all the difference. Just 10 to 15 seconds and stirr.
