Strawberry Pie II

Reviewed: Jun. 7, 2011
Wow is this great! I used my grandma's strawberry pie crust recipe. Used 3/4 C sugar (splenda 1/4 C & 2 Tbsps), 1/2 C H20. Just as another reviewer noted, I mixed the mashed strawberries in with the water and then added the mixture of sugar and cornstarch. My mixture wasn't clear so I was concerned at first but it became a pink translucent mixture pretty quickly. I would say I only boiled it for about 4-5 minutes max.

Peanut Butter Vegetable Chicken Soup

Reviewed: Nov. 7, 2009
A 1/2 cup of peanut butter sounded like alot. Found the conversion of Tablespoons to 1/2 Cup is 8 Tablespoons. I did 4 T to begin with and then tasted. I found the soup needed the full 8T. Got with the peanut butter...you won't be sorry

Spaghetti Carbonara II

Reviewed: Sep. 18, 2008
As others suggested, I put the eggs and parm cheese together before mixing with warm pasta. It was wonderful. I did substitute turkey bacon, which didn't give off as much fat. I didn't drain off any of the fat and just added the onions and 2 garlic cloves. I also decreased the pasta amount so it would be more saucy! Yum!

Zucchini Pasta II

Reviewed: Sep. 14, 2008
My husband doesn't even like zucchini and he loved this pasta. I used 3/4C white wine instead of the chicken broth and it turned out wonderfully. Also doubled the cream cheese. I cooked the zucchini and onions together with garlic and butter w/spices listed for about 10 minutes. Great way to eat Zucchini!

Walter's Chicken and Mac

Reviewed: Sep. 14, 2008
This was not a hit in our household. Tired recipe as stated and it did not have a cheesy taste. The condensed chicken soup gave it a salty taste as well.

Best Bruschetta Ever

Reviewed: Sep. 14, 2008
Good recipe but made a few changes: Only used 1T Olive Oil, increased garlic to 2 cloves, added 1T of Balsamic Vinegar, and added 2T finely diced red onion. Left out the Parmesean cheese b/c our toast already had it on it. I only had about 4 hrs to refrigerate this and it turned out great. Bringing it back to room temperature tastes best. We made a Bruschetta Bar and allowed our guests to serve themselves using the premade Nonni's Panetini Garlic Parmesan Toast.

Easy Mint Chocolate Chip Ice Cream

Reviewed: Aug. 8, 2008
Ice cream turned out great! Did use skim milk and the whipping cream. Might go up to 1% next time to give it more fat. Also used 1/3 cup of Creme de Ment instead of the peppermint extract. It gave the ice cream a great minty flavor and no need for the food coloring as well. Will be making this base recipe again and will try adding other flavors and addins too.

Followed the recipe as written except for the brown sugar. As others suggested, added brown sugar on top and bottom. Also made good left over meatloaf sandwiches!

So good. How can it not be. Anything wrapped in bacon is tasty! They were gone before they were completely cooled. Followed recipe exactly.

Peanut Butter Cup Cookies

Reviewed: Jul. 10, 2008
These were alittle dry but the peanut butter cup on top saved it. Also added additional peanut butter as others had suggested and freezing the cups ahead of time helped tremendously.

Summer Chicken Salad

Reviewed: Jul. 7, 2008
My husband and I love chicken salad. This was too sweet for our liking and the dill seemed out of place. We are going to stick to our favorite recipe from this site Becky's Chicken Salad.

Yummy Honey Chicken Kabobs

Reviewed: Jun. 7, 2008
Wow was this good! I marinated the chicken and veggies (& pineapples) over night. I also added 2T brown sugar and 1/4C pineapple juice to the marinade. I thought I might have made the marinade too sweet but the sugar from the ingredients just burned off leaving heavenly, moist chicken and veggies. I will definately make this again.

Baked Apricot Chicken

Not a hit with our family. The onions were over powering and the flavors did not blend together well for us. Will not be making this again.

Chicken Pot Pie VIII

Reviewed: Aug. 7, 2007
My husband normally turns his nose up to cassorole dishes but this one was a hit. I did as others suggested and used only one potato. Also used baby carrots (as that was all I had on hand). Didn't have time to make the crust so I used one box of the jiffy cornbread mix. Otherwise made as the recipe suggested. Very Yummy! Will make over and over again. Thanks for sharing.

Ham Salad II

Reviewed: Nov. 23, 2006
Very good. Only 4 stars b/c it was alittle too mayo for me. Next time I think I'll scale down the mayo. I cut the recipe in half and used 1/4 cup onion & grn pepper. As others suggested I didn't add any salt. I also added some colby cheese, which added good flavor.

Boilermaker Tailgate Chili

Reviewed: Nov. 20, 2006
This chili is alot of work & ingredients but worth it. After completing the chili as directed, I cooled it in the fridge until my guests arrived. I tasted it when it was completed but it was EVEN better once it was cooled and reheated. My husband and his friends ate several bowls of it.
