Refried Beans Without the Refry

Awesome! I cooked mine for 10 hours on low in the slow cooker and they were peftect! Used a hand mixer to blend them as others had suggested - splattered everywhere, but still easier than mashing, I think!

Spanish Rice Bake

This was good. Note that if you are using brown rice (I did), you need to let the rice mixture simmer for at least 45 minutes. I used salsa instead of chili sauce because I wasn't exactly sure what kind of chili sauce the recipe meant.... still good! I served it with black beans the first time and for leftovers, I put the beans right on top!

Easy Tuna Casserole

I was tempted to make adjustments to the recipe, but figured I'd try it the way it was written first. It was really good and I won't change a thing next time. Topped with a little hot sauce, it was perfect!

Zucchini-Chocolate Chip Muffins

I used 1/2 cup of whole wheat flour and 1/4 cup applesauce in place of 1/4 cup of the oil. Oh, and I doubled the chocolate chips to 1/2 cup. They are fabulous. My 2-year old daughter gobbles them up and thinks they're cupcakes!

Classic Macaroni Salad

Tastes a whole lot like the Yoder's Macaroni Salad that my husband loves.... a little less creamy, but I used high fiber pasta and lowfat mayo, so it's so much healthier - I'll sacrifice a little creaminess for that savings!

Chocolate Chip Banana Muffins

These are fabulous. I make them every few weeks for my 2 year old daughter and freeze half so that we always have some on hand. I reduced the oil to 1/4 cup and added 1/4 cup applesauce. I also use 1 cup of regular flour and 3/4 cups whole wheat flour to make it a bit healthier.... and 3 very ripe bananas.
