Refried Beans Without the Refry
Awesome! I cooked mine for 10 hours on low in the slow cooker and they were peftect! Used a hand mixer to blend them as others had suggested - splattered everywhere, but still easier than mashing, I think!

Spanish Rice Bake
This was good. Note that if you are using brown rice (I did), you need to let the rice mixture simmer for at least 45 minutes. I used salsa instead of chili sauce because I wasn't exactly sure what kind of chili sauce the recipe meant.... still good! I served it with black beans the first time and for leftovers, I put the beans right on top!
