Best Tuna Casserole

When mixing the ingredients, I knew that it would be too dry. I added some milk before putting it into a round stoneware casserole dish. I added a bit of salt and pepper and instead of canned mushrooms, I rinsed some fresh ones and then drained the pasta over them before adding to the mixture. Good recipe.

Ravioli Soup

tasty! I doubled the liquid, added a box of frozen spinach, a pkg of fresh mushrooms, a can of sliced carrots, some tortellini and some garlic salt. AMAZING and easy.

Jalapeno Soup

Taste is amazing.When I read the recipe I assumed it called for velveta because of the lack of thickener. I hate velvita so I just threw all the ing. in the pot ( I used fresh garlic and only one large pepper) I also left the leaves on the celery. Gives a great taste to any soup. Added my thickener ( water and flower) to the pot and boiled for 30 min. Then added a splash of milk and a bad of shredded chz! MY NEW FAVORITE SOUP EVER! And really cheep!

Vegetable Pasties

I am rating this as five stars because the filling is amazing! I know the dough traditionally is supposed to be heavy. I didn't care for the dough though so I remade with biscut dough and a rolling pin. We liked that much better. Thank you for the great recipe we will use our modified version over and over!

Easy Rice Breakfast Treat

I have never eaten this type of food before now so I don't have anything to compare it to (like the other reviewers) I love it. I did follow advice of another reviewer and used brown sugar and rasins. But It would taste good without. The kids love it. I am glad I finally tried this.

Black Magic Cake

so easy and so delicious. The only change I made was a substitution of heavy cream for the buttermilk. I simply didn't have any on hand or I would have stuck to the recipe exactly. I will make this again with the buttermilk and I am sure that it will be even better. I made whipped cream with the leftover cream and topped it with a can of cherry pie filling and it was spectacular!

Chicken Tortilla Soup II

Good start for a soup. I have made this a few times and find it still needs a bit more flavor. I tried adding both green chilies and black beans or pinto beans and It hit the spot for me. As for the tortillas, after reading various reviews I decided to fry them and set aside. I added half of them in 10 min before serving (for some texture) and served the other half crispy on top. Save yourself some time and buy tortilla chips at the store. Good stuff though.

Can't Tell They're Low-fat Brownies

For low fat they are good. I used splenda instead of sugar and I followed previous suggestions to reduce the the ammount. I wish I had not. Other than that, the texture was close and the flavor was unique. They passed the kid test. And that is what is ultimately important.

Cajun Cabbage with Rice

delicious! Perfect comfort food. I had an extra bag of coleslaw mix and I didn't know what to do with it. I found this recipe and wasn't sure the kids would like it but I wanted to try it anyway. They loved it! And my husband went back for seconds. I had to lay off some of the spice for the kids sake but I bet it is even better with the heat. I am looking forward to tomorrow when I can eat the left overs.

Ground Beef Wellington

This recipe has good bones but to get it good I had to do quite a bit of tweaking. You don't really need that much ground beef. I added more mushrooms and doubled the onion. The sauce needed a lot of help I added various seasonings as well as Worcestershire. It turns out better when you make individual rolls (I prepared this both ways at once) To do the individual rolls you need more of them.

30-Minute Minestrone

GREAT! I was unsure about the macaroni noodles but they turned out wonderfully. Because I made such a large batch I cooked the pasta separate and added just enough to each bowl. That way the pasta wouldn't get swollen and mushy for the next meal. I was out of beef bullion so I used chicken broth. So good and really healthy!
