Marinated Pork Tenderloin
Loved the ease & amazingly tasty results of this recipe - lots of bang for little buck. Followed other comments & used 1/2 onion + 4 garlic cloves as substitute for powders. Marinated only 4 hours b/c that's all I had time for. Cooked at 350 for 1 hour, wrapped in foil. Broiled last minute or two (flipping once) to give outside a slightly browner 'crust.' Boiled remaining marinade for 5 minutes or so to reduce, then added 1 TBL of cornstarch and moved off heat while stirring. Great as gravy. Only mistake I made was making 1 loin vs. 2 so I could save one for later. Entire family devoured the 1st one so there is nothing left for weekday lunches.

Cucumber Sandwich
This has become my sandwich staple? I make an olive cream cheese at home and use that as the spread. Use the avocados whole - no mashing. And use the sprouts if I have them - otherwise it's good without as well. On toasted sourdough or any good thick hearty bread. Just perfect.

Cheesy Pizza Dip
This was a good, easy recipe that is probably great for a large crowd. I tried to use it to get my picky son to eat it for dinner and it wasn't a big hit with him or the rest of the family. I made it as directed leaving out only the red peppers and green onions. Added pepperoni and served with warm breadsticks. I won't make again as a family meal/dip but perhaps for a larger group. The recipe makes 7 cups (a lot!) so if you plan on just for your house, you might want to half it. The full batch took about 30 minutes in the oven 'til it was bubbly.
