Fried Onion Rings

Reviewed: Mar. 8, 2010
This was good- I thinned out batter- thought it was too thick.... added garlic - dipped in flour (seasoned) first to help batter adhere- make sure oil hot- kept oven warm- sliced onion thicker so as not to be frying onion rings for hours... Gave 4 stars only, not because this recipe is not good, but because I've had better-- I love Guy Fieri's beer batter onion rings..I think they are my favorite... Soak onions in buttermilk for 2 hours before frying...

Creamy Chorizo and Chicken Soup

Reviewed: Feb. 20, 2010
As Fat~dog~Lane suggested I added shrimp.. I had 1 boneless skinless breast that needed cooking also.... so I put it in also... I used a can of "rotel" for my tomatoes... I did add some onion as FDL suggested also.. Bout 1 1/2# of shrimp, which I put in in the last 10 mins... Oh yeah, I added a can of black soybeans... Homemade chicken broth also... Very tastey... very low carb.... I also think this would taste good thickend a bit and served over rice.......

Frosted Banana Bars

Reviewed: Feb. 20, 2010
Made to recipe... 'cept used a 13x9- increased bake time... Totally awesome... basically banana bread with icing.... I used "cream cheese frosting ll" I would not insult a homemade cake with a can frosting... (ok for a quick box mix though!!) Used 4 medium rotting bananas... very tastey!! Will add nuts next time....

Blueberry French Toast

Reviewed: Feb. 15, 2010
**** review for sauce only**** I intend on making this whole recipe... But for valentines breakfast it would have been too much food without scaling down... so... I made my usual french toast and made the blueberry sauce/syrup to go with it.... My husband fell in love!!! Have plenty left over and he either wants to put it on ice cream or use for blueberry short cake.. As others reviewed if you intend to make ahead, that this made with this amount of cornstarch will really thicken as it cools.. might curb cornstarch, but for me, I'm gonna reheat and thin out...*** Small change only*** I added a dash of vanilla...

Creamy Hot Chocolate

Reviewed: Feb. 15, 2010
So good. Of course, now my husband says he ain't gonna drink that boxed no more. My mom always made hot chocolate on the stove for us but she used canned hersheys syrup... It was such a special treat.. I served this to my son and husband on valentines morning in red heart covered cups and loaded with whipped cream and sprinkled cocoa on top... Looked like a $5.00 hot chocolate... Tastes great cold too!!! ***** IMPORTANT***** USE MILK!!! NOT WATER!!!

Swanson® Maple Dijon Chicken

Reviewed: Feb. 5, 2010
In fairness to the recipe, It turned out the way it said- It thickened down for me(others had problems)- but... I did not like it- I love maple but apparently not with my chicken- shockingly- my 11 yr old son and my dh loved it- real surprize as he is very hard to satisfy.... so try it for your self- It apparently is a matter of your personal taste..

Scalloped Potatoes I

Pretty yum** I used cream of mushroom soup, (what I had on hand)- Turned out good- added a little extra onion- sprinkled cheese in between layers (like others suggested) and on top- only thing - make sure you check for doneness- after an hour, my potatoes were not done - I assumed after an hour they would be cooked- mistake - I microwaved to finish cooking- thanks- would definitely like to use ched soup next-

YUMMO!! Only way my dh will eat carrots!!! Makem sweet- works well with sweet potatoes too!! I use a 1# bag of baby carrots!! Cuts labor way down!!! I also punch a small hole in carrot bag and add a little water and let them steam in microwave- drain water off in colander (let'em sit and steam off) and add other ingredients and carrot to a micro safe bowl and microwave a couple mins. -- so easy -- dash of cinnamon is good also!!!! try it!!! Coconut Raspberry Bars

Reviewed: Nov. 23, 2009
Very rich- great flavor in small doses- only change- I did not have walnuts, used pecans. Even after spraying pan, mine stuck. but... I used a metal pan and maybe that had something to do with it- I sprayed the heck out of it though- Husband thought they were yummy- He loves raspberries!!! Like I said, a little goes a long way!!! Would try again in glass pan- Thanks...

Chicken and Chinese Vegetable Stir-Fry

Reviewed: Nov. 20, 2009
Doubled the sauce(including water) to make Lo-mein .. Turned out good- added ginger-but.... It was kinda "rich"- don't know if it was the extra thick oyster sauce I used or what- next time I will not double the sauce I will just add a little more water and not oyster sauce and use extra cornstarch-- My 10 year old son lovvvved it!!! Of course adding 12 oz. noodles makes a meal that would feed a small chinese village-- yum!!! leftovers!!!!!!
