Jimmy Dean Sausage Cheese Balls

Reviewed: Mar. 24, 2011
Holy Cow!! The best sausage balls ever!! my family has made sausage balls every holiday season since the beginning of sausage! I can remember sitting and mixing with my hands when I was little! These are the best.. I've had them too dry, too greasy, you name it.. but if your a sausage ball lover this is the recipe.. Never had I had them or made them with onion and celery.. I used hot sausage to give plenty of flavor.. I wanted to spread the celery and onion love and used my mini-processor to finely mice them.. instead of the 2 teas. garlic I used 1 teaspoon of garlic salt and 1 teas. of reg salt.. Used low carb bake mix(carbquik) -- This make these very low-carb.. Yum.. hot or cold grab and go goodness.. For all who are first0time sausage ballers- Yes they are greasy- hey you got 2# of sausage and a # of cheese. what do you think?? drain on paper towels out of oven.. Make sure your baking sheet has sides.... Yes they are stiff to mix.. Put all your ingredients in a bowl and let come to room temp.. These are almost impossible to mix with a spoon.. so... Wash those hands and take off those rings and dig in!! Never tried it but maybe a good processor would do the job... Gonna make some more today... Like I said with the low carb mix these guys are awesome for snacks!!!

Corned Beef Roll-Ups

Reviewed: Mar. 24, 2011
Very good! but I cant help but tweak... Sorry. Used a small food processor to make make cream cheese mix.. added a little horseradish and a couple tbls. of mayo.. I had corned beef left over from st. patricks day which I chopped and crumbled- Makes it hard for wrapping!! I used low carb tortillas and wrapped mix up.. Some were plain some I placed a sweet pickle in the middle, some had well drained sauerkraut in the middle.. placed in fridge to "harden" and cut into pin-wheels.. Tastey.. WOuld make again..

Strawberry Spinach Salad I

Reviewed: Mar. 6, 2011
Made dressing as recipe states, with the exception of using splenda instead of sugar.. Using the blender to mix, as 1 reviewer stated, made ease.. used toasted walnuts.. I used to make this years ago but instead of paprika it used dry mustard.. This was excellent though!! My 12 year old went ga-ga over it and wants it for dinner again tonight!!I placed dressing in a storage jar and refrigerated so I can make individual salads when I need.. This is one of those recipes that you mix it all together you either eat-it-all or waste-it-all... No reason to when you do it the single salad way.. 4 large group I would def. go with mix all and serve.. With the exchange of splenda 4 sugar this becomes much healthier and a low carb recipe!! It was awesome with the splenda.. Try it.. Thanx

MY HUSBAND LOVED THIS.. WE LOW EAT LOW-CARB AND THIS RECIPE MINUS THE CORNFLAKES IS AWESOME.. I AM A TWEAKER.. SO FOR ALL OF THOSE TRADITIONALIST I PRE-APOLOGIZE.. 2# OF CHUCK.. 12 OZ. QUALITY BACON DICED SMALL..8 OZ MUSHROOMS CHOPPED..1 VERY SMALL YELLOW ONION CHOPPED FINE.. 6 OZ. CABOT MILD CHEDDAR IN CHUNKS.. GARLIC SALT.. 2 EGGS.. SQUIRT OF LOW-CARB KETCHUP..... I RENDERED BACON AND REMOVED FROM PAN.. ADDED ONION AND MUSHROOM TILL SOFT.. DRAINED WITH BACON.. COOLED A LITTLE BIT.. ADDED ALL TO MEATLOAF AND AT FIRST I HAD MY DOUBTS.. BUT... IT WAS MAGNIFICENT!! DID NOT ADD ADDITIONAL ANYTHING TO TOP.. I HAD READ OTHER REVIEWS THAT SAID CHEESE WAS LOST IN MEATLOAF SHREDDED SO I HAD CHUNKS.. ADN SOME WERE OOZING OUT THE TOP AND OUT THE SIDE.. TOTALLY AWESOME.. MY HUSBAND MADE SURE I WROTE THIS ONE DOWN 'COZ I NEVER MAKE MEATLOAF THE SAME WAY TWICE... THA MUSHROOMS GAVE AN EXTRA MEATY TASTE, CHOPPED FINE IT WAS HARD TO TELL THEY WERE THERE.. THEN YOU WOULD BITE INTO A CHUNK OF GOOD MELTED CHEDDAR.. WE ATE WITH "SMOTHERED GREEN BEANS" ....... OH I OMITTED THE MILK... I WOULD DEFINITELY TRY WITH THE SWISS (DIDNT HAVE ANY)

Hot Bacon Asparagus Salad

Reviewed: Feb. 23, 2011
Using Splenda in place of sugar makes this an awesome Low-Carb recipe~~ I used broccoli intsead of asparagus (its what I had!).. I used pecans that had been toasted in browned butter instead of the almonds (its what I had!).. I steamed broccoli in microwave ( did not want it to crunchy)... Made the "dressing as directed". Did not add broccoli.. There was only 2 of us so i assembled 2 salads as such.. 2 bowls.. added in some romaine.. broccoli on top.. dressing.. pecans and bacon pieces on top... (no eggs).. OMG.. My husband loved it.. I got 3 complements during dinner on it.. when you do it this way, you don't waste salad as this salad doesnt hold over..

Honey Mustard Stuffed Chicken Breasts

Reviewed: Feb. 23, 2011
Used sugar-free honey (makes recipe low-carb)- very tastey... Did not cover!!!! Sauce was plenty thick... Two of my breasts were big enough to stuff.. I butterflied them and beat'em.. I had 2 small breasts that I flattened and just put ham and cheese on top.. Worked fine that way too... even easier.. Thanks

Mama's Asian Chicken and Rice

Reviewed: Jan. 14, 2011
My 12 year old son gave this a 1000 stars.. I personally would not used the cooking method listed hence the 4 stars.. too much simmering. Also would always add vegetables, I think your losing a good opportunity witha great sauce not to get your vegetables in..The sauce.. 5 stars..Only a couple changes.. used orange juice concentrate instead of juice and eliminated the peel. Used dark mushroom soy, rice vinegar.. They only change my son would make is to 1/2 the red pepper.. It was fine for me.. Doubled the sauce.. I cooked more like stirfry.. Marinated my chicken in a little of the sauce for about an hour.. added cornstarch to the sauce itself.. A little oil in wok and I cooked my chicken till almost done.. removed from wok.. a little oil and I added a healthy bunch of broccoli and snow peas to wok and stirfried couple of minutes.. added in sauce.. simmered a couple of minutes till it started to thicken and added back in my chicken .. couple of minutes and it was cooked through and we were eating.. served over rice.. Would definitely make again with these changes.
