Slow Cooker Chicken Taco Soup

Great recipe!! I used the Bill Echols taco seasoning recipe as recommended by the author. The only change I made was that I cooked the soup on high for 1/2 the amount of time due to time constraints, but it was still delicious. I served it to the hubby with light sour cream, grated cheddar cheese and crushed Fritos. We really enjoyed the way the beer flavored the soup. The recipe was large enough that I could freeze the leftovers for a future meal.

Grain and Nut Whole Wheat Pancakes

Fantastic recipe. Like other reviewers, I used 2 eggs instead of 1 and substituted the vegetable oil for olive oil. I also added chopped pecans & a tsp of cinnamon. Topped the pancakes with sliced bananas and warm maple syrup. The end result: YUM!

Whole Wheat Banana Nut Bread

Made this recipe tonight - it was delicious. I used pecans instead of walnuts, and when the bread had 10 minutes left to bake, I spread creamed honey on top and then sprinkled brown sugar & cinnamon over it. Yummmmm!

Three Bean Salad

Chicken Stir-Fry

Great base recipe. Like others, the sauce didn't thicken very well so I added another tablespoon of cornstarch while stir-frying. I also took the advice of another reviewer & added some chopped cashews near the end of the cooking process and the crunchy texture & slightly sweet taste was great. Also, I sprinkled in some brown sugar to the stir fry along with additional soy sauce, ginger and garlic powder, and a dash of Worcestershire sauce.

Waistline-Friendly Turkey Chili

Fantastic recipe!! I used Sweet Baby Ray's Sweet and Spicy barbecue sauce and threw in some chipotle tobasco sauce. Omitted the green pepper (didn't have any) and used a whole red pepper. Halved the red pepper & chili powder to a tsp. each and achieved just the right spiciness for my liking. Omitted the cilantro (I hate it) and added some fresh chopped parsley instead. Will definitely be making again, thanks!

Wow, was this good. I've never had anything like it and both my husband and I really enjoyed it. Next time, I'll go easy on the cayenne pepper. The only change I made to this recipe was doubling the raisins (I love them). I posted a pic of the deliciousness and will definitely be making this again. Thanks!

No Time to Cook Chicken

Yum! This was really tender & versatile and a big hit in the house. We ate it over whole grain pasta. My only complaint is that it was a little on the bland side (for me). Next time I make it, I will add some additional seasonings. Thanks for the recipe!

Slow Cooker Thanksgiving Turkey

I modified the recipe like another reviewer by using a 3 lb. boneless Purdue turkey, but other than that, followed the recipe to a T. Wonderfully tender and the juice made a mouth-watering gravy. I put the juice into a saucepan mixed with a little flour and whisked until thick. Mmmmmmm!! Thanks for this recipe, will definitely make it again!

Tantalizing Turkey and Blue Cheese Meatballs

Made exactly as directed, the meatballs were absolutely delicious. However, the mixture was very wet and so it was difficult to shape it into balls. I ended up having to add more bread crumbs than the recipe called for. I would recommend cutting back on the oil, as this seemed to be part of the reason the balls wouldn't shape correctly. I substituted blue cheese with feta. Great recipe, thanks for sharing it!

Cornbread Casserole

I made this to go along with some beer chilli made by a friend - it was a huge hit!! Everyone went back for thirds. I used light sour cream and reduced fat cheese to cut down on some of the calories/fat, and it was still delicious. Great, easy recipe to make!
