Quick Peanut Butter Cookies

These are delicious but very fragile cookies! I doubled the recipe, added 1 cup of dark chocolate chips, 1/2 cup of chopped walnuts, 1/4th cup of rice flour, and 1/8th cup of almond meal. Several reviewers had remarked about adding rice flour to make them easier to roll. I also used half brown sugar and half regular sugar. Next time I will try using more rice flour to see if the cookies will be more sturdy. The chocolate chips and the walnuts go really well with the peanut butter! My batches took a minimum of eight minutes in the oven. I baked them in a ball on the cookie sheet and then gently used a fork to press them down slightly once they were out of the oven. I used parchment paper and let them completely cool on the cookie sheet before carefully picking them up with a fork.

Beth's Spicy Oatmeal Raisin Cookies

This has become my favorite cookie recipe! In addition to using all butter, I added 1/2 tsp of allspice with the cloves, used golden raisins, added 1 cup of orange flavored craisins, and two cups of walnuts. You won't believe how fantastic these are!

Sausage Cheese Balls

At a party these will disappear fast, so make sure you get a few before they are gone! If you want the grease to drain away, cook them on a rack over a 13 x 9 or larger pan. Spray the rack with non-stick spray. When the sausage balls are done, use a fork to take them off the rack. I also add two eggs to the recipe so everything stays together better and improves the flavor as well.

Raspberry Truffle Fudge

This turned out great! I used 1.5 tsp of the raspberry liquor and 1/4 cup of seedless raspberry preserves. I also added one cup of chopped walnuts to the melted chocolate mixture in the bottom layer. I brought it to a party and it was a big hit and it sold out at our bake sale!
