Wow! This was amazing! I followed some of the other suggestions. I doubled the rub ingredients except for the cinnamon. I cut the roast into two chunks, rubbed it, poured the broth around it. Added half a sliced onion and some cilantro springs while it cooked. Flipped in halfway through. When it was done, I shredded it, and put it in the oven at 400 for 20 minutes. We served it with chopped onion, avocado, lime wedges, shredded cabbage, cheese and cilantro for toppings. I think I'll add a little chili powder to the rub next time though for a little kick. This is my husband's new favorite meal!!
