Fiery Fish Tacos with Crunchy Corn Salsa

Homemade Mac and Cheese

I made this last night for my boyfriend & I. We thought it was good- very rich, but definitely needed extra salt & pepper added to the mix to bring out the flavor. Very good, though.

Restaurant Style Lasagna

I thought this came out very good. I made the mistake of trying to take a short cut & using the "Oven- Ready" lasagna noodles- don't do this! The noodles in the upper layers didn't even cook all the way! I will definitely try making again (boiling my own noodles first, of course) & adding a tad more sauce & meat.

Mini Cheesecakes I

These turned out beautiful & delicious! The only thing I'd complain about is the difficulty getting them OUT of the paper muffin cups to eat! We ended up just using forks to eat right out of the cups. Still excellent though!

Blue Cheese, Bacon and Chive Stuffed Pork Chops

This was pretty good- I used crumbled feta in place of the blue cheese, and added alittle more bacon than the recipe called for, but it came out with nice flavor. I'd love to play with this recipe alittle more to get it just right for my personal tastes, but it was certainly a great new spin on making pork chops!

Broiled Tilapia Parmesan

Made this last night- LOVED IT!!!! Will definitely make again. This recipe was so EASY and so QUICK- I recommend prebroiling the oven, making the mixture & setting aside, then cooking your sides first before concentrating on the fish because it simply only takes a few minutes! I used seafood seasoning instead of the celery salt, added a dash of regular salt, and left out the onion powder for personal preference, and this turned out beautiful & delicous. Very happy with this one- it's a keeper!

King Ranch Chicken Casserole III

This wasn't as good as I expected from all the great reviews... was alittle soupy, even after sitting out a 1/2 hour. If I ever try this again, I'll probably switch up the kinds of soup, and use less broth, more totillas to soak up the extra liquids. It was just "ok".

Lemony Cheesecake Bars

These were yummy- I made them last night and my boyfriend & his friends gobbled them up! They were very creamy & I loved the lemon flavor in a cheesecake! I will definitely make again, and probably use this recipe as a base for other types of cheesecake bars I'll whip up in the future, substituting some other flavor for the lemon- maybe strawberry? ummmmm

Salmon with Lemon and Dill

I tried this for dinner last night- I made it for my boyfriend & a friend of his- they both loved it! I thought it was nice & simple, and the lemon & dill were 2 flavors that complimented the salmon perfectly. I used the dill sprinkle seasoning instead of the fresh, and it still came out nicely. I thought the lemon/ butter mixture made too much, though- there was too much liquid- I would reccommend making about 1/2 of what the recipe says to drizzle over the salmon (unless you are making more salmon than the recipe calls for). Overall it was very good and easy! I will definitely make again :)

Marbled Pumpkin Cheesecake

I made this one for Thanksgiving dinner desert- I thought it tasted more like a "cakey" pumpkin pie than a cheesecake, but my family liked it... I probably won't try this cheesecake again- beautiful presentation with the marbled top though :)
