We have entered this into 2 chili cook-offs. It won first place in one and second in the other. My husband likes to let everything but the beans & chocolate simmer for a while, then adds them at the end. We halve this recipe and it still fills a 5 quart slow cooker to the brim.

Cashew Chicken Casserole

This was pretty good. I exchanged the green peppers for broccoli, and Ritz crackers for saltines. I made it in the morning for dinner the same day instead of refrigerating it overnight and it turned out fine. I would suggest sauteing the onions & celery before adding them to the casserole as they were still crisp when the noodles were done.

Salad with Prosciutto and Caramelized Pears and Walnuts

Not worth the money or effort. The onion in the dressing overpowered the orange; I ended up using the vinaigrette from "orange vinaigrette brown rice salad" instead. That helped, but I won't make this salad again.

Million Dollar Cake

I have made this cake twice now and I believe I have solved the problem of runny frosting. Use a can of pineapple chunks, drain and reserve the liquid. Then puree the pineapple and mandarin oranges in a blender and make the rest of the frosting as directed. It is smooth, delicious, light, and just the right consistency for spreading. Use the reserved pineapple liquid instead of water when mixing the cake. It makes it more flavorful. Yummy cake. Will make this again and again.

Chilled Strawberry Soup

I added ground nutmeg & cinnamon and more sugar than what the recipe called for and the flavor was fantastic. I believe it was even better than the strawberry bisque that I had (and loved) on a cruise. I will definitely make this again.

Peach-a-Berry Pie

This is a favorite pie for my husband & I. If you don't have flavorful, in-season peaches then go with frozen peaches - they are better than tasteless, grainy, fresh ones. We always use frozen raspberries and it's delicious.

Mexican-Style Goulash

Cheesy Potato and Corn Chowder

I was wary of some of the ingredients at first but I am so glad that I tried this recipe! I used frozen corn and regular Velveeta instead of Mexican-style, and it was so good! Creamy and hearty. My husband didn't even seem to notice that it didn't have meat in it. I've made it twice in 2 weeks and will make again. At some point I will try the Mexican-style velveeta.

Grandma's Peach French Toast

I can't go back to regular French toast after this! It was so good. Using what I had, I used a 15 oz can of peaches and frozen blueberries: it was a fabulous combination! I did add a little milk & nutmeg to the eggs. Next time I will spoon the egg mixture onto the bread instead of pouring it.

Grandma's Polish Perogies

Two suggestions that make go from alright to WOW! 1) After boiling the perogies remove from the water and fry them with a small amount of oil until browned on both sides. 2) Top with cottage cheese. By themselves, they are a bit bland, but with the cottage cheese they are fantastic. For the filling, I omitted the prepared cheese sauce and added more grated cheese and a little milk & butter. We liked them so much that we wanted to have family dumpling cook-off, trying different types of filling. With some leftover dough we made dessert dumplings filled with cherry pie filling which were also very good.

Toffee Chunk Cheesecake

Phenomenal cheesecake. I made it for my husband's birthday and he keeps on telling me, "Cheesecake doesn't get any better than this." I followed other's suggestions and saved half of the caramel & chocolate for the top of the cake. I read that putting flour in cheesecake gives it more of a cake-like consistency so I omitted that. It required a longer cooking time than in the original recipe, but it was absolutely worth the time and effort. Make the toffee-lovers in your life happy, and try this cake!
