Maple Glazed Chicken with Sweet Potatoes

This is really good. It is not necessary to use genuine maple syrup; you can use Mrs. Butterworth's or some other brand of pancake syrup. I also caramelized a yellow onion instead of using green onions, and it was great. I agree with some of the other reviews and think it is a good idea to add a little brown sugar and butter to the sweet potatoes.

Tofu with Pork and Cashews

I liked this a lot and will make again. I backed off on chili paste because my kids won't eat anything with too much heat. If you do too you'll still get great results because the flavor is simply excellent. Don't omit the cashews and onions; the crunch they add is great.

Wonderful, I changed it around a bit, though. 1 cup frozen blueberrys 2 cups frozen peaches 11/2 cups chocolate almond milk 2 tablespoons honey Beautiful!

Beer Pancakes

This is a cool funky recipe. I will make it again (seems like a camping recipe to me). I used a very hoppy beer preferred by beer-snobs (I am one). But I think this recipe would have been better if I had used something like Coors or Miller Lite because the flavor should be a bit more delicate.

Tarragon Chicken Salad

Blueberry Cream Cheese Muffins

These tasted good, but it was a lot of work for muffins. WARNING: It makes too much; cut the recipe in half. I had so much batter that I filled the muffin tin to the top and still had a bunch left over. Because I stuffed the tin, batter overflowed during cooking. Now, I'm cleaning my oven.

Beth's Peach-Nectarine Muffins

These are excellent. I've read a few of the reviews that said the muffins were bland. POPPYCOCK! I believe those reviewers used peaches that had a low sugar content or were not sufficiently ripe. Made with good peaches and nectarines, I could eat these muffins every day for the rest of my life.

Strawberry Oat Muffins

These muffins reminded me of a girlfriend I once had in college: flat. They were worth trying, but I didn't fall in love with them. The same was true for my ex-girlfriend. I give the muffins and her three stars out of five.

Banana Sour Cream Bread

This bread ROCKS! Now, can I share with you my first attempt at this recipe? Before making a new recipe, I try to make sure I have all ingredients. (I don't like to stray the first time.) I didn't check here because I was SURE we had everything. But as soon as I started, I realized we didn't have enough butter. I substituted a container of apple sauce we normally throw in my kids' lunch (abt 1/4 c.) for most of the butter. When opened the sour cream container in the fridge, I saw that my wife had used most of it in some guacamole she made a couple nights ago. What was left had goops of avacado in it because she stirred the guac and then double-dipped with the same spoon to get more sour cream. I substituted vanilla flavored yogurt. That also meant I didn't have to add vanilla, but probably O.D.'d the sugar content. Moreover, I halved the recipe. I forgot that fact when I added cinnamon, baking soda and salt -- another O.D. Finally, when I went to add nuts, I couldn't find walnuts. They were apparently eaten without being added to the last grocery list for replacement. I added pecans instead. It still turned out great. None of these hassles were big problem, but I spent probably an extra half-hour in preparation time looking for the ingredients in the fridge/pantry.

Cornflake Waffles with Honey Sauce

The cornflakes were a great idea. They gave the waffles a mildly nutty texture. The recipe is delicious. I also tried it adding 1/2 c. sour cream and a splash of vanilla. The variation was excellent.
