Downeast Maine Pumpkin Bread

Reviewed: Dec. 16, 2006
I adore this recipe!! This tastes just like the pumpkin bread I buy from the bakery. I subsituted half a cup of unsweetened applesauce for half of the oil, and decreased the sugar to 2 cups and it is still wonderfully sweet. I put in three tsps of cinnamon and it tastes great! I bet this pumpkin bread would taste pretty good with chocolate chips in it.

Black and Blueberry Muffins

Reviewed: Jun. 11, 2007
I really loved this recipe. The muffins taste best warm. I made them healthier by substituting a cup of yogurt and a cup of milk for the half-and-half and I used whole wheat flour.

Homesteader Cornbread

Reviewed: Jul. 14, 2007
I love this cornbread recipe. It's a little too sweet for my taste, so I always decrease the sugar. Otherwise it's perfect.

Cottage Cheese Bread II

Reviewed: Jan. 6, 2008
Great bread!!! The texture is definitely different, almost chewy. You can't really taste the cottage cheese, but its texture is there. To make it a little healthier, I used white whole wheat flour and added 1/4 cup of gluten. I also substituted yogurt for the oil. I'll definitely make this again, especially since there's still cottage cheese in the refrigerator!

Hazelnut-Raisin Corn Bread

Reviewed: May 12, 2007
This was a pretty good recipe. It didn't really taste like a cornbread since it does not use any cornmeal, but the hazelnut and raisin combination was pretty interesting. I substituted yogurt for the butter and it came out fine. My mom really liked it, so I'm giving it five stars.

Ultimate Maple Snickerdoodles

Reviewed: Mar. 19, 2008
Wow this was a good cookie!!! I used 1/4 cup of maple syrup instead of 2 tbsps, and I used a mixture of white sugar, brown sugar, cinnamon, and nutmeg for the maple sugar mix since I didn't have any maple sugar. This cookie is so delicious!!! I'll definitely make it again.

Chocophiles

This is a delicious cookie! To make them healthier, I substituted yogurt for half of the butter and used whole wheat flour. I also only used bittersweet chocolate chips because those were the only kind I had. This is a really rich, really good cookie. I brought them to a party and everyone loved them.

Volcano Pancake

Reviewed: Dec. 21, 2007
This was a really tasty "pancake." It didn't really rise much, but then again I omitted the butter completely. That might be why. To make it healthier, I substituted whole wheat flour, twelve egg whites instead of the whole eggs, and seltzer for the milk. I also used fat free cheddar cheese.

Apple Cider Biscuits

These apple cider biscuits are really, really delicious, especially warm out of the oven! To make them healthier, I used whole wheat flour and yogurt instead of the butter. I also increased the cinnamon to one teaspoon. Will definitely make again.

Jo's Rosemary Bread

Reviewed: Oct. 13, 2007
I made this bread for my mom's birthday and both of us loved it. It does taste like Macaroni Grille's bread, only a lot less greasy. I think I prefer this recipe to Macaroni Grille's bread. I used 2 1/4 cups whole wheat flour and added 4 tbsp wheat gluten. For the herbs, I added a tbsp of basil and oregano instead of the Italian blend.

Blue Cornmeal Pancakes

Reviewed: Mar. 5, 2007
This is so far my favorite pancake recipe. I usually cut the recipe down by one half, skip the butter, and use one egg. I would suggest that everyone who loves cornbread tries this. It's absolutely delicious and comes out perfectly fluffy everytime.

Ignacio's Super Peanut Butter and Jelly Sandwich

Reviewed: Jun. 28, 2007
I actually didn't think this tasted TOO different from a regular PB&J. That said, this sandwich recipe is really good. A little time consuming, but I found it fun to make. The toasted slice does add nice texture.

Wheat Crackers

Reviewed: Apr. 9, 2007
This is a great, simple recipe. Like others said, the possibilities are endless. These yummy little crackers taste great with onion or garlic powder. I tried peanut butter, Nutella, and tahini too, but the flavors didn't really come out. The crackers taste best the day after. In fact, they taste just like the ones I got from the store when I was little.
