Sweet Potato and Black Bean Chili

Very tasty. Used half sweet potato and half butternut squash because it's what I had. The texture of the sweet potato was much better. Next time I'll try doubling the cocoa.

Black Bean Spread

This is delicious and so easy to make. We like to use it as a burrito filling with sauted veggies, or as a dip with tortilla chips. The recipe is perfect as-is.

Apple Strudel Muffins

With the modifications others suggested, these were wonderful. I used half brown and half white sugar, used two apples and added 1 teaspoon cinnamon to the batter. I made them for the new neighbors next door, and I was really glad I made them rather than buy them something from the store.

Eggplant Rounds

This is a simple but tasty preparation that I'll definitely make again. I cut the eggplant thick -- about 3/4 inch. I also cooked some zucchini the same way, cut in third lengthwise (they were small zucchinis). I added some garlic powder to the cornmeal mix, and I baked instead of frying the vegetables. I cooked at 400 for about 40 minutes, using plenty of oil and flipping halfway through. I'm very satisfied with these; they go great with the stuffed shells I made for dinner.

Asian Ginger Dressing

After just finishing having this for the first time, I can tell I'll be making it a lot and using it in salads and as a marinade. I skimped a little on the honey and used tamari instead of regular soy sauce, because it was all I had. I also subbed about a teaspoon of sesame oil (all I had) for some of the olive oil. Next time I'll use more sesame oil. This was delicious on my spinach salad with veggies and pepper-crusted tuna steak bites.

White Bean Spread With Garlic & Rosemary

Whole Wheat and Honey Pizza Dough

This wasn't for me. I used the dough to make two thin crusts. I didn't care for the taste or texture. I really prefer the Jay's Signature Pizza Crust and the Quick and Easy Pizza Crust.

Banana Oat Muffins

Yummy. I've made this twice. Once I subbed applesauce for the oil and they were fine. The second time, I used applesauce but also added one tablespoon of oil, and that made it easier to get the muffin papers off. FYI ... you'll need about two and a half small-medium bananas.

Absolutely Fabulous Greek/House Dressing

This dressing is delicous and very versatile. I scale the recipe to 10 servings and keep a jar in my pantry just about all the time. I use it with tuna instead of mayo and on just about any sandwich or salad that calls for a vinaigrette. I like that it doesn't have a ridiculous amount of oil in relation to the vinegar. I don't change a thing ingredientwise.

Party-Size Greek Couscous Salad

This was gobbled up at my work potluck. I used the Absolutely Fabulous Greek/House Dressing from this site and two boxes of Far East couscous. I've made variations of this recipe with different vegetables and just eyeing amounts. You can't really go wrong.

Spicy Vegan Potato Curry

I love this curry! I've made it twice now. It's good right away, but the next day the flavors are excellent. I altered it by using light coconut milk and going a little light on the cayenne and salt. I think as a result of using the light coconut milk, it needed a couple of teaspoons of sugar. The second time I made it, I added a diced green pepper and threw in a diced carrot with the potatoes for the last half of cooking. Easy, delicious and full of veggies -- for a lot less than at a restaurant.

Garlic Mashed Red Potatoes

These were very tasty, although next time I'll use more garlic (maybe five cloves instead of three), because I didn't get much garlic taste. I peeled only the ugly parts off the potatoes and left the rest of the skins intact, and I liked the texture. Will definitely make many more times, but with more garlic, and maybe some herbs.

Very Fruity Rum Punch

This was wonderful. I made several batches for a party and it was gulped down. I used half regular Bacardi and half coconut Bacardi, skipped the banana liquer and used Sprite Zero instead of water -- it makes it nice and fizzy but doesn't add any calories. For reference ... one batch fills a standard pitcher. My punch bowl easily held four batches at a time.

Jay's Signature Pizza Crust

Delicious. I split the dough in two before I roll it out and make two medium-sized crusts. I think using all of it for one crust would make a pizza that was way too doughy. The second time I made this I made the mistake of rolling the crusts too thin. Also, it's not a good idea to refrigerate an uncooked crust -- I did overnight because plans changed and I didn't have time to make the second pizza, and when I finally cooked it, it has like a cracker.

Beaker's Vegetable Barley Soup

I really liked this and have made it twice now. The second time, I added some mushrooms I had in the fridge. I also added an additional three cups of water/broth to thin it a bit. Next time I might saute the veggies before adding them to the pot to give it deeper flavor.

Vegetarian Chickpea Sandwich Filling

This turned out great, and I'll be making it often. I'm not a fan of mayo, so I used Italian dressing. I also added some leftover green pepper. I used a food processor instead of mashing the chickpeas because they kept flying out of the bowl.
