Kielbasa and Potato Bake

Really good - especially considering how easy it was. Only changes were using turkey kielbasa and did add a generous sprinkling of garlic powder (based on others' reviews of it being bland). Must've done the trick because it wasn't bland at all. Will definitely make it again,

Tuscan Soup

This was a solid "okay". If I could have, I would have given it 3.5 stars - a little more than average, not quite worthy of 4 stars but I rounded up because, although they didn't rave about it and nobody wanted seconds, the kids did eat it. It wasn't bad - just nothing fantastic. Looks much tastier in the picture than in real life. Made it just as written. Not planning on making it again though.

Baked Chicken Nuggets

The perfect dinner for the first night of spring soccer! Quick, easy, portable, and best of all, nobody said it was disgusting. Made it just as written except took earlier reviewer's advice and baked it on a cooling rack so both side could crisp up. Very good.

Best Tuna Casserole

I have a tried and true tuna casserole that I've been using for years. I made this one based on one single review - she described this as an "adult version" of tuna casserole. What an accurate description. It's not overly cheesy, the veggies add a bit of class (as much as tuna casserole can be classy), and overall, it was a good weekday dinner. The only change I made was using bread crumbs instead of potato chips on top.

World's Best Scones! From Scotland to the Savoy to the U.S.

I've never had scones. I've never wanted scones. So what in the world was I thinking when the idea to make them popped in my head. I followed the recipe exactly except for 2 insignificant changes (substituted 3/4c of the flour with whole wheat flour and adding Craisins instead of raisins). They really turned out tasty. I did freeze the butter, as suggested by earlier reviewers, and grated it into the dry mixture. And I have to admit, in a last minute act of desperation, I panicked that my family (used to Oreos and Chips Ahoy) would find these bland. So....I did whip up Vanilla Glaze (also from this site) and spread it on top to make them sweeter. Overall though, these are good without being too sweet (or too bland).

Vanilla Glaze

Perfect complement to the scones that I just made ("World's Best Scones" also from this site). Scones tend to be a a bit blah and I wanted to add some umph to it. The glaze works perfectly - just a little extra sweetness without overpowering it.

Coconut Curry Tofu

In my desperate attempt to get my family to eat healthier, I think I may have pinged onto something that worked. Everyone (except my 6 year old) really liked this. I made it exactly as written and was enjoyed by all (except the 6 year old that kept saying the tofu "felt" like cheese). Really good.

Thai Chicken Bites With Dipping Sauce

Made this for Super Bowl. I could go on and on but "yummy" sums it all up. Made just as written and even got adventurous and made my own Thai peanut sauce (okay, truth be told, I didn't have the store bought stuff in the house). Again, Mmmmmmmmm. They were gone in a flash.

Homesteader Cornbread

I honestly don't know why I made this. I'm not a corn bread person - never have been. I made chili for dinner on this cold, snowy evening and, for some inexplicable reason, corn bread sounded like a good side. Made this just as written except baked it in a Pampered Chef 4-section mini loaf pan (vs. the 9x13 pan). This came out just plain yummy. Corn bread, where have you been all my life?! I thought that making the mini loaves would shorten the time but I still needed to cook it the full 35 minutes (might've been due to my geriatric oven) but this was really good. I did not see the note about mixing it for 5 minutes so next time I will have to try that but, even without the extra mixing time, no complaints from this corn bread hater!

Slow Cooker Chicken Stroganoff

I thought this was very good - very tasty, certainly very easy, and very filling. You must be a lover of comfort food though because the rest of my family (NOT comfort food lovin' folk) did NOT enjoy this meal (hence the downgrade to 4 stars). Too bad for me....'cause it sure was good - and easy!!!

Chicken Enchilada Dip

Made this for the football game and it was a HUGE hit. Only changes were doing half mayo, half sour cream, added a can of black beans (anytime I can sneak in protein....), and cooking the chicken in enchilada sauce. Had a good bit of leftovers so I took other's advice and made Enchiladas for dinner tonight just using the leftovers as the filling. I thought the dip was a hit -- my family couldn't get enough of the Enchiladas!! This one is definitely on the rotation!!

Linguine with Clam Sauce

Not sure what's more surprising - how EASY this was or how GOOD this was! Made it just as written with a couple of minor changes. Only changes were using 4 cans of clams, a little more garlic, and about half the butter. Evenstill, how yummy. Everyone (even my picky "I hate everything" 6 year old) liked it.

Classic Macaroni and Cheese

Wasn't fantastic, wasn't horrible (hence the mediocre rating). Kids didn't like it and wanted the "real" mac n' cheese (Kraft). Was a bit grainy and needed some tweaking with more pepper and some garlic salt. Would've SURELY been overcooked if kept in the oven as long as recipe states. Did take other's advice and added another can of evaporated milk. Not worth making again.

Thin Mint Crackers

Thin Mints have always held a special place in my heart so when I came across this recipe, I had serious doubt that something so simple could produce my beloved cookie. Much to my surprise, this is a mighty fine copy of my favorite Girl Scout cookie!! I made some with sprinkles, some with crushed candy cane, and some I left plain. I actually preferred them plain but all versions were yummy. Made it just as written using Ghiredelli bitterweet choco chips. Using Andes chips as others have mentioned would cut down on an ingredient but we're only talking 3 ingredients. Mmmmmmm.

Peppermint Meringues

It took 3 times to get this right but it really was "the charm". The first 2 times, I used peppermint extract and both times, the fluffy egg whites deflated and took on a shiny appearance. The didn't cook right (flat instead of fluffy) and tasted more dense than meringue should. The third time, I made it without the extract and they came out perfectly. It was the only difference between the first and second, and then third, time. I highly recommend this recipe but only WITHOUT any add-ins like the peppermint extract.

Tomato-Curry Lentil Stew

I gave this 4 stars because shockingly, my family that vehemently dislikes anything remotely healthy, actually really like this recipe. I thought it was just okay. It did take a bit of added seasoning (a lot more curry, garlic powder, onion powder and a lot more salt than I thought it would need). I would've rated it far lower but the family liked it. Makes a bunch!

Chicken Cheese Chowder

Maybe my expectations were too high after all of the rave reviews but I was very disappointed in this recipe. I made it just as written (only subbing butter for margerine and real cheese for "processed"). Maybe those subtle changes were enough. It was way too runny to be considered a "chowder" and needed some last minute spice additions due to being bland. Nobody was wowed by this, not even my son and me who should be regulars at Cheese Eaters Anonymous. Won't be making it again.

Asian Beef Skewers

Holy cow (ha ha, no pun intended) is this good!!! I'm not a red meat fan and my husband's not a my-cooking-fan so there were 2 strikes already against this recipe. Everyone, my husband, 3 of our kids, and myself, all loved this recipe! (Only the 1 year old spit it out - not surprising since it didn't come out of a Kix box.) I marinaded it for about 4 hours but really, the only change was that I made it stove top in a pan instead of on the grill (rainy night) so the fact that it was still good, I can't wait to actually try it grilled! Really, really worth making again!!!

Taco Seasoning I

What more can I say that hasn't already been said. It's a great recipe made of a combination of pronounceable ingredients. And yes, no MSG!! Made a bunch so I'll have it onhand (as to not be tempted by the packets that are sitting in my pantry). Mmmmmmmmmmm.

White Sauce

Great basic recipe. I substituted whole wheat flour instead of the white so my "white sauce" was more of a light beige-ish sauce but the taste was still great. Served it over pasta with salmon and it was the perfect side.
