Sweet Restaurant Slaw

This was my first venture with making cole slaw. I would have to say that it was even better than restaurant slaw. DEFINITELY better than deli counter slaw!!!! Yum yum!! Made it just as written except for using mayo in place of Miracle Whip (personal preference). As posted, it does get more watery as it sits (no fault of the recipe, just the nature of cabbage). The taste just gets better and better as it sits and its super simple to drain off excess fluids if desired. Unquestionably a keeper!! ***** UPDATE: Just made it again but this time, used Broccoli Slaw (found same place as shredded cole slaw in store). did taste different than original but still very, very good. And healthier!! Either version is a winner!!!!

Tacos in Pasta Shells

Never made (or heard of) this twost on tacos. It was easy and good though. Everyone enjoyed it. I did add black beans (which I try to do whenever I think I can get away with it and it really added a nice texture.). Would make again.

Banana Crumb Muffins

Yummerific!! Made just as written (except for the addition of a little cinnamon in the batter because it sounded good). Didn't have enough cupcake tins so made 1 dozen muffins and 1 small loaf. No matter the shape or size, man this was good!!!!!

Sophie's Zucchini Bread

This is the first time that I've ever used the words "zucchini" and "yum" in the same sentence. The only changes I made were to incorporate the previous suggestion of 1/2 white sugar and 1/2 brown sugar. I also made mini loaves so I could make 1 with dried cherries, 1 with mini M&Ms, and some plain. Yum on all accounts.

Goulash Supreme

As written, this was "okay" at best. Before serving it, I had a sneak-taste of it and went into "oh-no-dinner's-yucky-how-do-I-fix-this mode". As written, it was bland. I added more spices, cream cheese (as previously suggested), and out of desperation, added about a cup of spaghetti sauce. After the additions, it did upgrade to about 3 1/2 stars. Still don't think I'd make it again but at least tonight's dinner was salvageable.

Mexican Lasagna

Very easy, very good (the best combination!). Did make some insignificant changes - added refried beans on top of the bottom layer of tortillas and mixed black beans and can of Rotel (in place of tomatoes) in with meat mixture. How many stars is a meal with no complaints worth?

Home Style Macaroni and Cheese

I LOVE mac n' cheese and my husband HATES mac n' cheese. I am only picky in that I don't like it grainy and I don't like it with Velveeta. This recipe was easy to make (minimal mess!!) and it was g-o-o-d. All 4 of our kids at it and loved it (even after the disappointment that it wasn't coming out of a blue box.) The biggest shocker was that my husband raved about it all through dinner - only pausing to take seconds and thirds. Definitely a keeper!!!!!!!

The Best Bean and Ham Soup

Very good! Loved by all (quite a statement that my 9-year-old-hates-all-food-son even asked for seconds). Made it just as written except for regular chicken broth from the pantry (vs. low sodium). It was a bit salty so using the low sodium would help. I did also add more beans. (If I can sneak 'em into my family - I'll do it!) It was good eats on an unexpectedly snowy winter day.

Aztec Casserole

This was very good and definitely worth making again but I only gave it 4 stars because, as written, it seemed a little empty. Next time, I'll follow previous reviewers suggestions of adding black beans, possibly olive, etc. Only change made was to add a can of Rotel tomatoes and green chilis (didn't have just green chilis). Pretty good as is. Really good potential.

Blueberry Buckle

Have made this twice now - once with fresh blueberries, once with frozen blueberries. Both times, the taste was GREAT with the only noticeable difference being the frozen berries' purple colored batter. The only change made was using butter in place of the shortening and using half white and brown sugar for the topping. Very yummy (not super sweet) treat!!!!

Clark's Quiche

This was very good and enjoyed by most of the family. Made it just as written except I pre-baked crusts 10 minutes and used cheddar and swiss (it's what I had). Like the layering but will probably not do it next time. I'm not a fan of onions and have to bury them in stuff so finding a layer of them was unappealing to me. The taste was good though.

Amazing Chicken

This was very good. You don't taste the mayo and everyone gobbled it up. I only gave it 4 stars because I think it would've lacked something if I didn't add the parm cheese and garlic salt to the bread crumb mix. Super easy, everyone enjoyed it -- sounds worthy of making again in my book!!

Baked Seafood Au Gratin

I'm not usually a risk-taker when it comes to cooking and have to admit that this recipe made me very nervous. It's one thing to bomb on spaghetti pie - it's another thing entirely when there are so many high-dollar ingredients. I made it just as written (didn't scale it down) and I do agree that it was bit soupy - thick, but soupy nonetheless. It was still very good though served over rice and I would definitely consider making it again (although my 11 year old said he'd rather have had grilled cheese for dinner).

Neat Sloppy Joes

These were good. They actually deserve 4.5 stars (if I could) because everyone except my 11 year old really liked them. He said they weren't "right" - maybe comparing them to the only other thing he knows as a Sloppy Joe - the gross meat by-product concoction from school. Made it just as written except for using white sugar in place of brown (had just used the brown sugar up making cookies). Would definitely make again!!

Best Big, Fat, Chewy Chocolate Chip Cookie

Shhhhhh, hear that? That sound is me LOVING this cookie!! When starting this, I was thinking 'how many different ways can you alter a chocolate chip cookie?' Something about these is different - they're light, thick (not flat - BIG plus for me), and just super good. Not exactly a "diet cookie" so too many will turn me into a big, fat, chewy mommy so the 2....or 3.....that I do have, I will thoroughly enjoy!!

Tuna Noodle Casserole from Scratch

I don't usually disagree with so many 4 and 5 star reviews but this didn't impress me. As written, I found it to be bland and way too oniony - at the same time! Any maybe I'm just used to my good ol' stand-by recipe with cream of chicken soup but this wasn't creamy at all so it just didn't seem like "tuna casserole" as I know it. The kids seemed to like it but I'm such a casserole-lover, my dislike for it is taking precedence. And I agree the previous reviewers - took WAY too much time, effort, and dirty pots and pans to put this together. Won't be making this one again.

Cranberry Hootycreeks

Worthy of every one of these 5 stars. Due to a lack of cranberries, mine were actually Dates and raisin Hootycreeks (although, like a previous reviewer, I'd like to know what a Hootycreek is as well). Whatever it is, it's yummy!! Other than the cranberry substitution, I also subbed milk chocolate chips for the white choco chips. Rest of recipe was made as listed and it was good. Took a bit longer to bake. Will definitely make again!!

Incredible Chicken

This really was pretty darn good (just shy of "incredible"). I did have to up the temp to 425 about 45 minutes into the cooking time because it still looked pretty raw and then continued to cook for another 15 minutes (that may be the fault of my old oven though). For as easy as it was, it deserves the 5 stars.

Marshmallow Treats

Gotta love a classic! Although, I have to disagree with the suggestion of also being able to use marshmallow creme. Tried that in college and it never hardened up. The marshmallow creme stayed creamy so it made for gooey, drippy, limp marshmallow treats.

Creamy Hot Cocoa

I almost committed the horrible offense of not having any hot chocolate on a snowy winter day. Wow,who knew you could actually make it from scratch vs. a little packet?! My kids LOVED LOVED LOVED it! They said that it was way better than the "other stuff". Super easy to make. I thought it was a little sweet but the kids raved about it.
