My family loved this! I am no Martha Stewart and cooking is not my best talent ..... However, this recipe was so quick and yummy I had time left over for errands and looked like a great wife with dinner ready at the end of the day! I cooked the rice ahead of time in the rice cooker. I did add 2 cloves of garlic and some cilantro to the ground beef and onions while they were cooking ( I used frozen onions and frozen cubes of garlic and cilantro) I also added lots of Worcestershire and some gravy master too! Mixed in the rice with 1 1/2 c. mild salsa and 1 can of drained diced tomatoes. My biggest change to add some healthful value was subbing the plain corn for a frozen mix of corn, peas, green beans and carrots. I did not have any hot sauce so I used a small dash of ground red pepper. I mixed this all together and put in the fridge until I was ready to bake it several hours later. I then added cheese to the crackers and sprayed the top of the crackers with spray butter instead of using the 1/4 c. of margarine. This will be in my monthly rotation of meals and a winner every time!
