Gingery Quinoa-Stuffed Acorn Squash
On the advice of other comments, I used about half the ginger and I'm glad I did. I think it would have been overpowering with any more. I thought this dish was pretty good, but not great. I baked my acorn squash for 30 minutes and it was over-baked (mushy and brown). I'm sure this would have tasted better if the squash was not overbaked.

Tomato Zucchini Casserole
My husband and I both loved this dish. I am always on the hunt for vegetable based dishes because they are so much lower in calories. I thought it tasted kind of like lasagne, but I have to say I liked it better than regular lasagne. I didn't have bread crumbs so I tried a half cup of corn meal. It was a little gritty, so I will be making some bread crumbs to have on hand for the next time I make this. Great way to use up extra zucchini and tomatoes from the garden. I also used Monterrey Jack cheese instead of cheddar.

Megan's Spaghetti Squash Tacos
I especially loved that the squash made the tacos much lower in calories - as opposed to using meat. We like it spicy so we used a little hot sauce on top. Hubby thought it needed more cumin but I didn't. What a great way to use up those abundant spaghetti squash in my garden!
