Vegan Pancakes

Whether vegan or not, this is a great pancake! I made it as stated except I did mix all ingredients together (no whisking or well) + 1 ripe banana & they came out light, fluffy & delicious-just as NICDELIS mentioned. I'm not a vegan & actually prefer this recipe over the more popular pancake recipes on this site. These seem lighter (and save me some calories which doesn't hurt either!). And I didn't have a problem w/a thick batter, it was perfect. This is my new go-to pancake recipe!

Delicious Ham and Potato Soup

Absolutely amazing! I doubled the recipe & left out the celery since I didn't have any. Other than that, I made it as stated & it turned out full of flavor. All the ingredients blended beautifully. It's better than any restaurant soup I've had, and I'm big on soups. I'm happy I doubled the recipe! Thanks for the keeper, this one goes to the top of my "soup" list!

Zesty Chicken and Potatoes

A really great, flavorful & easy recipe! Tastes even better the next day. I did tweak it a little bit because I had no lime & just for personal preference: didn't have any lime so I squeezed a whole small lemon into it (when finished it didn't taste lemony at all). Used a bit more than a cup of dressing based on other reviews saying it wasn't enough (I'd say 1 1/2 cups is good). I also topped it all w/some smoked paprika which was REALLY good. Next time I will cut the time down to about 45 min. as my chicken was a bit on the dry side. But the leftover dressing in the 9x13 dish helped a lot with that. This recipe is too easy & good to not be a keeper, thank you!

Pepperoncini Beef

It's hard not to love a recipe that's so easy and gives you a great end product! We love spicy dishes but didn't find this as spicy as I thought it would be, based on some reviews. It was actually pretty mild, though maybe it's because we used the mild pepperoncinis. About an hour before dinner I shredded it all so it could "marinade" in the juices, it really helps get that flavor throughout all the meat & makes it less dry. After tasting it I wanted to give it a little more something so I threw in quite a few big splashes of worcestershire sauce. It complimented it well & I actually preferred it this way. It gave it more dimension. We made sandwiches, buttering hoagie rolls & grilling them on the stove top. Then heaped the meat & peppers on (added some extra juice from the pot too), topped w/some pepper jack & put them under the broiler for a minute. Perfection!

Six Can Chicken Tortilla Soup

I modified this a bit since I like a bit of creaminess to my soups. From another review, I only used 1 can of chicken broth (reduced sodium) & I added 2 cans of cream of chicken soup. I also added cumin, paprika, chili powder & garlic powder. I simmer it all on low for about an hour to really blend it all together. Made this way it was awesome! Best torilla soup (and the easiest) I've ever had. Everyone loves it. Thanks for the keeper!

Guacamole

Awesome! This is a great guacamole. The only thing I did differently was add a bit more garlic to suit our tastes. We will be making this again-many times over! Note: To mash the avocado I used a meat tenderizer. It made it just a bit chunky which was perfect for us-worked like a charm! THANKS!

Cilantro Serrano Cream Sauce

This seemed a lot more like a dip than a cream sauce. It was just okay, it was the mayo that makes it 3 star, it didn't seem to go with the rest of the ingredients, at least to me & seemed to throw it all off. I might try sour cream next time & see if that works better. Thanks for the inspiration! PS....when you are working with the chilies make sure to !!!WEAR GLOVES!!! I made that mistake & my hands were honestly red & stinging/burning for 2 days. It was horrible!

Braised Balsamic Chicken

This was okay but for some reason I was expecting to be able to taste the balsamic more. I think I should have used less tomatoes than the recipe used. I am a huge fan of balsamic & will adjust the amount next time to fit my preference. I also used minced garlic instead of garlic salt for more flavor. Sadly, I still wasn't overly impressed as many others were.

I love this! I never would have thought to add anything to my bacon but I saw this & thought I'd try it. And am so glad I did! The seasonings work so well with the bacon, it's a great combo. And it couldn't be easier!

Double Tomato Bruschetta

Ever since I brought this to a family party I am always asked to bring it to every family get-together! Instead of doing all that chopping I just use 2 large cans of petite diced tomatoes, minus the juice. It's just a lot easier! I am also a huge fan of balsamic & garlic so I always add a bit more. I strongly urge you to use FRESH basil, it's what really makes this dish standout. Thanks for this great recipe!

Roasted Rack of Lamb

Very good! I used an 8 bone rack. The crust really has a nice flavor. I followed the recipe exactly (minus putting the foil over the bones!) & it came out great. Prior to baking I did take the lamb out of the fridge to rest for about an hour. I also reduced some balsamic vinegar in a pan for about 5 or so minutes & drizzled it over the lamb...amazing! But it's still good without it too.

Restaurant-Style Hashbrown Casserole

This was very good! I sauteed the onions before adding them to the bowl because they always ended up still being a bit crunchy if put in raw. I also added more cheese, we are big on cheese in this house! This is a keeper. Thanks for the recipe!

I love Asiago cheese so I thought I'd try this out. It was okay, I too think the mayo was a bit much. I agree with another poster, maybe try sour cream instead next time.

Too Much Chocolate Cake

Combine how easy this is to make with how good it tastes & it easily gets 5 stars! To make it a tad bit healthier I substituted the oil for applesauce. I also set the oven to 335 & put it in for 60min. It came out perfect. The cake is so moist & deliciously chocolately, love it! I make this all the time now. And it keeps for a while, I had it for a week & it never went dry! This recipe is a keeper for sure. Thank you!

Cake Mix Cookies VIII

Amazing! Amazingly easy, used little ingredients & delicious! I used Betty Crocker Super Moist Triple Choc. Fudge mix & mint chips, yummy! I followed the recipe as well as added the recommended 2T oil (I used Canola) and 1t. vanilla extract. It was perfect! I put big spoonfuls of the dough on the baking sheet (making 24 3 in. cookies) and baked them for 11 min. in my pre-heated oven & they were perfect. No hard edges or overbaking! These aren't as dense as typical cookies, a bit more airy & light. I could eat the whole batch! Thanks for this great keeper!

Four Cheese Macaroni Casserole

Absolutely amazing, a true keeper! THe first time I made this my husband had 4 servings, no kidding! I do add more cheese & seasonings based on our personal preference & layered the pasta & the tomato mixture as other reviews did. It makes great leftovers too! My husband & I can't get enough of this dish! Thanks for this one!

Lamb Chops with Balsamic Reduction

Very good! Loved the flavor & the butter really adds to it. This was my 1st time making a reduction sauce & while it took forever :) it was well worth it. The reduction also works well with steaks.
