I absolutely love to cook & experiment in the kitchen. I am addicted to the FoodNetwork :)and being newly married (July 2006) I thought it was high time to hone my cooking skills! And I am enjoying every minute of it.
My favorite things to cook
Any type of pasta or meat dish, I have the most fun with those. I rarely have time to make extravagant dishes so fast, easy recipes loaded with complex flavors work great for me.
My favorite family cooking traditions
My mom used to cook a lot more when I was younger & my dad could only make spaghetti, tacos & burritos or barbecue. So I would love to be the cook now!
My cooking triumphs
I wouldn't call anything I have made a triumph. I've been proud of lots of things I have made (including my 1st Thanksgiving turkey!) but no real triumphs here. I just love to have fun with it & eat the end results!
My cooking tragedies
No real tragedies either.....just experiments!

Vegan Pancakes
Whether vegan or not, this is a great pancake! I made it as stated except I did mix all ingredients together (no whisking or well) + 1 ripe banana & they came out light, fluffy & delicious-just as NICDELIS mentioned. I'm not a vegan & actually prefer this recipe over the more popular pancake recipes on this site. These seem lighter (and save me some calories which doesn't hurt either!). And I didn't have a problem w/a thick batter, it was perfect. This is my new go-to pancake recipe!

Delicious Ham and Potato Soup
Absolutely amazing! I doubled the recipe & left out the celery since I didn't have any. Other than that, I made it as stated & it turned out full of flavor. All the ingredients blended beautifully. It's better than any restaurant soup I've had, and I'm big on soups. I'm happy I doubled the recipe! Thanks for the keeper, this one goes to the top of my "soup" list!

Zesty Chicken and Potatoes
A really great, flavorful & easy recipe! Tastes even better the next day. I did tweak it a little bit because I had no lime & just for personal preference: didn't have any lime so I squeezed a whole small lemon into it (when finished it didn't taste lemony at all). Used a bit more than a cup of dressing based on other reviews saying it wasn't enough (I'd say 1 1/2 cups is good). I also topped it all w/some smoked paprika which was REALLY good. Next time I will cut the time down to about 45 min. as my chicken was a bit on the dry side. But the leftover dressing in the 9x13 dish helped a lot with that. This recipe is too easy & good to not be a keeper, thank you!
