Roasted Beets with Feta

Love it. My husband says it's the best vegetable recipe he's had in a while. I did not have shallots, but next time I will add them. There will be a next time!

Roasted Root Vegetables With Apple Juice

I did not care for the recipe, my husband thought it was edible. I had no problem reducing the wine and apple juice mixture. It's nice to see this variety of veggies used, but I think I would just go with plain olive oil, rosemary and a little salt. I'm going to use the veggies in a soup tommorrow.

It worked okay. I did half whole wheat, half unbleached all-purpose flour. The whole wheat made it harder to work with, but my husband liked it.

Restaurant-Style Taco Meat Seasoning

I made it vegetarian and omitted the beef and beef boullion. I also added a couple cloves of garlic and some onion as another reviewer mentioned. In place of beef, I used TVP (Textured Vegetable Protein). I'll use turkey next time.

Roasted Chickpeas

I wasn't able to get a consistent texture. Some of them were dry all the way through, but some were still chewy in the middle. Not very tasty.

Microwave Apple Crisp

I made it with two Fuji apples and in a Pyrex like another reviewer. I used the recipe scaling feature to reduce the recipe. I reduced the butter by 1 T. and cooked it for 10 minutes. The top crust was dry, but overall the recipe was good. Very, very sweet.

Chicken Vegetable Barley Soup

I followed another reviewers lead and added parmesan when I served it. Yummy! I think next time I'll add some white wine at some point to the recipe. I would call this a refrigerator door recipe. It was a nice way to use up any veggies that were about to go bad.

Be prepared for the garlic. I love garlic, but I halved it and still found it strong. I'll make it again. I usually have the stuff to make it on hand.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I cut the strawberries into chunks. I sprayed the pans, but I had a problem with the strawberries sticking to sides of the muffin tins. I guess paper would have worked a little better. It went over well at the parents' group I took it too. Everyone liked the alternative to cookies.

Strawberry Oatmeal Breakfast Smoothie

I'm not vegan, so I used organic skim milk. Very good. I followed another reviewer's advice and put the oatmeal in the blender for a bit first. I also added some chocolate protein powder and used it as a post-race smoothie.

Baked Teriyaki Chicken

Husband and child loved it... but not on rice. I made it with almost the full amount of sugar. I'll cut it down next time. Where we live, restaurants often add green onion cut up in the sauce. It's really good, so I'll try that next time as well.
