Easy Vodka Sauce

Truly easy, enough for 2 lbs. of pasta, but easily halved. I like my vodka sauce with some spice, so I soaked several dried hot red peppers for a few days in the vodka, I had a whole tomatoes which I pureed in the blender for a beautifully smooth sauce. I didn't realize that the recipe specified heavy cream, and I had bought light cream and it was fine. Be sure to top your pasta with grated cheese.

Panettone II

My loaf turned out too dry, and too dense for panettone. It looked beautiful, but lacked the flavor of a real Italian panettone. The smallest setting on my bread machine is for a 2 lb. loaf. The crust came out with a very pleasant color, but the bread did not have the desired texture. I'm new with a bread machine, and I welcome any suggestions.

Chicken Satay

This is an easy recipe, and my guests raved about it. I used chicken tenderloins, one per skewer, which is fast and easy. I nuked the marinade and it thickened beautifully and it made a delicious sauce.

Greek Lentil Soup (Fakes)

Sausage and Cornbread Dressing

This was the most outstanding accompanimemnt to our Thanksgiving turkey. We opted for a sweet Italian turkey sausage, and used a poultry seasoning instead of purchasing all the individual spices. This is far more flavorful than any plain bread stuffing I've ever had.
