Mom's Apple Fritters

The thing to remember with apple fritters is that you're not making a "dough" but rather a batter, like pancake batter. The perfect apple fritter should be fairly flat and crispy on the outside but light and fluffy on the inside. This recipe is a great start but you need to fiddle around with the amount of liquid in it to get the consistency you prefer.

Meatball Nirvana

Okay seriously, where I come from meatballs are cooked all day in sauce or gravy to serve on noodles or rice. My husband travels a lot though and he wanted a meatball sandwich. I cannot tell you how abhorrent the idea was to me but I made them. Oh my goodness, this was the best sandwich I've ever made. I made small meatballs loaded them up on a hoagie bread, loaded THAT up with mozzarella and then wrapped it up in aluminum foil and backed it for just a few minutes and it was the best, absolutely the best. Now I've made about 50 pounds of meatballs and canned them for instant sandwiches wheneven the kids want one.

Sophie's Zucchini Bread

This is my go-to recipe for zucchini bread especially right now when I have zucchini coming out my ears. This stuff is fantastic tasting, stays moist and has wonderful texture. I don't have to change a thing.

Baked Dijon Salmon

I really liked my salmon baked like this and I'm not a real big fish fan. I just had to add a little garlic to the mix and I let the salmon marinate in the sauce for a while. The salmon came out moist and very flavorful without overpowering the natural taste of the fish. I loved the hint of sweetness with the zest of the mustard. Next time I will use my homemade mustard with horseradish!

Sweet Grilled Shrimp Skewers

Oh, this is a wonderful recipe for shrimp!!!! My kids just adored this stuff. I followed the recipe with one exception as I did not have any ranch dressing (imagine a house with eight kids with NO ranch dressing-unheard of!!!) but the shrimp grilled in this sweet and spicy sauce were excellent anyway.

J.P.'s Big Daddy Biscuits

This is the biscuit we now use to make our sausage biscuit breakfast sandwiches. I make up HUGE quantities of these and put them in the freezer for anytime someone wants to throw one in the microwave for breakfast or a snack. They're perfect. And don't get me started on how wonderful they are with some sausage gravy.

Dark Chocolate Cake I

I will never bake any other kind of chocolate cake again. My son requested a "rich, chocolate cake" for his birthday and I found this one with it's favorable reviews and thought I'd try it. I know, you should never try a new recipe for something important but I trust the reviews on allrecipes and it's a good thing-this was the best cake I've ever eaten and I'm not particularly fond of cake. I too frosted with the ganache and the whole cake was beyond amazing.

French Bread

Just trying some new bread recipes and stumbled upon this one. I bake a LOT of bread so I honestly didn't expect to find anything new but this is the BEST french bread my family has ever had. Yes, I put swapped out some of the water for milk and butter and added a little salt but left it alone other than that. The crust is the perfect thin, crunchy crust that french bread is supposed to have while the inside is dense but light and chewy. Actually throwing out my own french bread recipe in favor of this one.

Cinnamon Rolls I

I make a lot of bread (a LOT) but haven't been satisfied with my version of cinnamon rolls. Well, this is my new 'go to' recipe for cinnamon rolls. Call me unable to change but I just had to replace some of the water with some milk and threw in some melted butter but ...oh and doubled the filling but these were perfect. The whole pan is gone and I doubled the recipe (hey, I have 8 kids, what can I say?).

Beth's Spicy Oatmeal Raisin Cookies

Perfect Oatmeal cookies? If they're not perfect for your family they easily could be with a little tweaking. This is the best recipe I've ever used bar none and I'm an old, old Oatmeal cookie fan. I too added some wheat flour, soaked my raisins, threw in some dates and put some chocolate chips in there just to confuse the kids. They're wondrous! I'm going to have to dial back the cloves just a little next time for the kids but they were perfect for me.

Brown Rice

I wanted a brown rice recipe to go with the caramel apple pork chops on this site. This is the one and I'll use it for other things as well. I fried up a little extra sausage and onion with some carrots and celery then added the rest of the ingredients per recipe substituting brown rice for white rice. It took a little more water but was absolutely amazingly wonderful covered with that apple topping from the pork chops. Even my rice-haters liked it! Next time I may just put in more sausage and just make this rice as a main dish...or maybe with some sausage gravy....

Caramel Apple Pork Chops

Don't ya just hate those reviews where someone says "we loved the idea but we ended up making something entirely different but we're going to review your recipe anyway?" Yep, that's what I did. I was worried about how sweet the sauce sounded "apple pie on pork chops" so I carmelized some onions and stirred up the sauce using my usual eyeball and dump method and then I added some soy sauce to it as well. The sauce is sweet, mellow and tangy all at once-the perfect compliment to chops.

Sourdough Buckwheat Pancakes

There's an oatmeal pancake recipe on this very site that is my family's favorite so they were skeptical when I started making something different but I have sourdough coming out my ears and wanted to try these. They're wonderful! Trust me folks, if you're wondering if you should make some sourdough starter, if you'd use it often enough to justify keeping something alive in your fridge ON PURPOSE this recipe is your justification. The only change I made was to add a little oatmeal as a concession the other recipe and I cut down on the wheat flour replacing it with white since my family still doesn't know they're eating wheat in almost everything (sssshhhhh). Very nice texture and wonderful flavor. This very well may be the new favorite pancake at our house.

San Francisco Sourdough Bread

My starter is only 8 days old so we didn't get really tangy sourdough but this bread turned out perfectly. The texture and crust and taste were all wonderful. The only change I made was to use a little gluten flour.

Easy Pizza Sauce I

I'm pretty picky about pizza sauce and this one is perfect. I too cut the water and added a little sugar but those were the only changes I needed. If you (like me) have been dinking around trying to tweak your own pizza sauce stop now, you've found the right recipe.

Hamburger Stew

Yep, this one is a keeper! A nice hearty soup for a cold evening. I too left out the beans though I may try them at a later date and added some beef broth and mixed veggies. The taco seasoning gives it a little different kick.

Chicken Wild Rice Soup I

What kind of idiot would try a soup that has wild rice and curry in it when her children don't eat rice or curry? Me! I have eight kids, each one pickier than the next and they ALL cleaned their bowls and asked for more. I used extra broth as well and threw in some sour cream, other than that I followed the recipe. We LOVE this soup!

Chicken or Turkey Tetrazzini

Excellent recipe! We actually had a little leftover ham AND turkey from Thanksgiving so I threw them both in there with some sour cream and sharp cheddar. I may make another turkey and ham just so we can have this dish again!
