I,M A HAPPILY MARRIED MOTHER OF 2 ADULT CHILDREN, AND AFTER 28 YEARS OF NOT WORKING WE BOUGHT A SMALL RESTAURANT. HAVING THE TIME OF MY LIFE. CONSIDER MYSELF A PROFESSIONAL EVEN THOUGH I'VE NEVER BEEN PROFESSIONALY TAUGHT. IF YOU PUT SOMETHING IN FRONT OF ME I CAN MAKE A MEAL OUT OF IT.(AND IT WILL BE EDIBLE!!!) COOKING IS WHAT I LOVE TO DO MOST.

MY FAVORITE THINGS TO PREPARE ARE PROBABLY CHEESE CAKES. CREATING NEW FLAVORS AND TEXTURES IS ALWAYS A CHALLENGE. ALSO BEEF AND SHRIMP DISHES HOLD A PLACE IN MY HEART.
My favorite family cooking traditions
MY FAVORITE 2 COOKING DAYS OF THE YEAR ARE AT CHRISTMAS TIME. MY BEST FRIEND WANTED TO LEARN TO MAKE BAKLAVA SO I INVITED HER OVER AND TAUGHT HER HOW ABOUT 12 YEARS AGO AND NOW IT IS A TRADITION, WE GATHER AT MY HOME (USUALLY) ON THE SUNDAY BEFORE CHRISTMAS, HAVE A FEAST WITH OUR HUSBANDS AND THEN PROCEED TO TEAR UP THE KITCHEN, IT HAS NOW EXPANDED TO OTHER YUMMY CREATIONS AS WELL. MY OTHER FAVORITE TIME IS DECEMBER 23RD WHEN MY HUSBAND AND I MAKE CHEESECAKES. WE WILL CREATE ANYWHERES FROM 4 TO 10, ACCORDING TO WHO IS GOING TO RECEIVE THEM THAT YEAR, IT IS FUN TO GET HIM IN THE KITCHEN, HE'S LIKE A LITTLE KID WHEN HE BAKES.
My cooking triumphs
JUST HAVING PEOPLE TELL ME THAT THEIR FOOD WAS WONDERFUL, OR THAT THEY'VE NEVER HAD ANYTHING QUITE LIKE THAT BEFORE. JUST TO SEE THE SMILE ON THEIR FACE AFTER THEY'VE EATEN THEIR DESSERT.
My cooking tragedies
WHILE PAINTING OUR HOUSE ONE DAY, OUR FRIENDS CAME TO HELP, AND FOR THEIR PAYMENT THEY REQUIRED DINNER, LEG OF LAMB, SOMETHING THEY'VE NEVER HAD AND HAVE ALWAYS WANTED TO TRY, AND OF COURSE I TOLD THEM I MAKE THE BEST. I PREPARED A SMALL LEG AND A SMALL PORK TENDERLOIN. PUT THEM IN THE OVEN AT A PRETTY HIGH HEAT AND NEVER REMEMBERED TO CUT THE HEAT BACK WHEN I PUT THEM IN. WELL NEEDLESS TO SAY WE GOT WORKING AND THE MEAT GOT FORGOT ABOUT AND THE LAMB WAS DESTROYED. IT WAS THE SADEST PIECE OF MEAT YOU'VE EVER SEEN. THEY STILL TEASE ME ABOUT THE "LAMB DINNER"

Caramel Pretzel Nut Popcorn
GREAT..but a couple changes make it AMAZING... used 2 bags of (lowfat-ha ha) kettle corn. made exactly to directions using pretzels and cashews. Put in large stainless bowl sprayed w/cook spray. (you could also spray inside of paper bag to prevent sticking) Mixed well. Put 2/3 of it in a foil (for easy clean up) roasting pan in oven for only about 5 minutes and then I melted about 8 Dove dark chocolate candies in microwave, tossed chocolate in remaining 1/3 caramel corn and put in fridge to cool. Took about 15 min. Broke up large pieces and added it to remaining cool caramel corn. This is a real treat. Trust me, try it!!!

Peppermint Meringues
THESE MERINGUES ARE VERY GOOD. DID MAKE WITH 8 EGG YOLKS AND 2 CUPS OF SUGAR. CUT THE SUGAR IN HALF AND USED "SPLENDA - MEASURES THE SAME AS SUGAR" FOR THE OTHER HALF. CUTS WAY DOWN ON THE CALORIES. YOU CAN ADD ANY TYPE OF EXTRACT, VANILLA, MAPLE, ETC...OR EVEN COCOA POWDER TO THESE TO CHANGE THE FLAVOR, BUT REMEMBER TO ADD ALITTLE EXTRA SUGAR IF ADDING THE EXTRACT TO KEEP UP THE CONSISTENCY OF THE MERINGUES. THE MORE SUGAR THAT YOU ADD THE CRISPIER THEY BECOME. ALSO YOU CAN SPINKLE THESE WITH COLORED SUGAR, CINNAMON AND SUGAR, OR EVEN FLAVORED JELLO (ALSO YOU CAN PUT JELLO IN THEM FOR FRUIT FLAVORED MERINGUES) FOR FUN COLORS AND TASTE, ADD MINI CHOCOLATE CHIPS, KIDS LOVE THEM. ALLOW TO BAKE FOR THE FULL 90 MINUTES AND THEM SHUT THE OVEN OFF AND LEAVE IN OVEN FOR ANOTHER HOUR. IF COOKING MORE THAN ONE TRAY ADD ABOUT 10 MINUTES COOKING TIME FOR EACH TRAY AND ROTATE TRAYS 1/2 WAY THROUGH COOKING. THIS HELPS FOR ALL THE MOISTURE TO BE EVAPORATED. MERINGUES ARE SUPPOSED TO BE CRISP ALL THE WAY THROUGH, NOT CHEWY IN THE CENTER. CAN PIPE THESE THROUGH A PASTRY PAG WITH LARGE DECORATIVE TIP TO MAKE FANCY MERINGUES. BEST TO BAKE ON PARCHMENT PAPER.

Creamy Chicken and Wild Rice Soup
FOLLOWED THIS RECIPE EXACTLY EXCEPT BEFORE STARTING I SAUTEED FINELY CHOPPED FRESH CARROTS, CELERY AND SWEET ONIONS IN UNSALTED BUTTER TILL TENDER. THIS SOUP IS VERY THICK, WHEN REHEATING THIN WITH WHOLE MILK, SKIM COULD SEPERATE IT. I TOPPED IT OFF WITH FRESH CHIVES.
