Italian Breaded Pork Chops

The breading was good and the pork chop stayed moist. However, I found that it was too greasy and didn't stay crisp. I halved the breading and it was still way too much! Will try again though...

Clams Casino

This was very good. I halved the recipe. I used turkey bacon, mixture of red,yellow, and green peppers, and less breadcrumbs. Everything else as directed and it was really very good. I bought 2 dozen little neck clams and mixture was just right... Dripped lemon juice on just before cooking and just just after... Great Valentines Day Treat!

Asian Lettuce Wraps

LOVED this dish! I was really surprised how great it was. It would have gotten five stars except I definitely found that I had to double the sauce for sufficient flavors. I can't imagine this dish with the sauce it called for. I used 1 lb of turkey meat for a healthier option, used fresh ginger, romaine lettuce and low-sodium soy sauce. I also stopped by a local chinese restaurant and used the crunchy noodles. Delicious! Thank you!

Ginger Glazed Mahi Mahi

This was unbelievable. My boyfriend and I loved it. The marinade/sauce was delicious. I doubled it to have even more and it was great. Love, love, loved it. This will definitely be again and again in my kitchen. And it was so easy too!

Japanese-Style Sesame Green Beans

I followed the recipe to a T and neither my boyfriend nor I like it. The sauce didn't work for us. I made it will the Ginger Glazed Mahi Mahi, which has an unreal sauce on it so maybe it just paled in comparison. Will not make again though.

Seven Layer Dip II

Seven Layer Dip was great for football playoffs. Everyone loved it. I added guacamole. I also added the taco seasoning to the sour cream/cream cheese mixture instead of the beans as the recipe suggested. I used fat free beans, fat free sour cream, and low fat cream cheese and no one could tell at all! Kept it in the fridge overnight and it was even good as leftover with lunch the next day. :) THANKS!

Brooklyn Girl's Penne Arrabiata

I would prob have given it a 4, but my boyfriend insisted it was a 3 star recipe. I started by making it as Brooklyn Girl suggested with half the red pepper and half the garlic figuring I could add as needed. Just with half the calling I thought the spice totally overpowered the dish. I didn't taste pasta, sauce, chicken - I only tasted the garlic and red pepper. I then added zucchini, yellow squash, mozzerella, turkey bacon... this made the dish more interesting - but it was still too powerful - you couldnt taste the ingredients besides spice. With that said, we both finished our plates and took leftovers to work today- so I guess it was OK afterall. Probably will not make again. But thanks for the recipe, it did seem to be an authentic Italian dish.

Chocolate Banana Bread

This recipe is good and it definitely stays moist and yummy for days after baking, but i didn't oooh and ahhh when it hit my mouth - which I am not sure if any banana bread would do.. but because it is chocolate it almost deceived me into thinking I was getting chocolate cake. Not sure if that makes any sense. Anyways, I used chocolate chunks instead of chips and a little extra and those were the best bites, so I highly recommend that.

Chicken Tortilla Soup I

I LOVED THIS SOUP!!! My boyfriend was so excited to take it to work for lunch the next day. I didn't use oregano, just some more cilantro. I used two cans of chicken broth, instead of water. The flavor was awesome. I also used crushed fire roasted tomatoes which added a nice flavor. Cheese, avacado, and chopped scallion on top really was wonderful. I made Mexican Cornbread with this and it was really delicious together.

Absolute Mexican Cornbread

My boyfriend and I LOVED this recipe. I halved the recipe which still made a large 8x8 pan. I cooked it at 325 for 40 minutes. I also cut the butter and sugar in half again (only using half a stick of butter and 1/4 cup of sugar). Aside from cutting some fat, I also think this allowed it to be more like cornbread than the corncake that many reviewed it as. I highly recommend doing it this way. I paired this with the Chicken Tortilla Soup and it was one of our favorite meals I have ever made! YUM YUM! Will def make again and again.

Grilled Portobello Mushrooms

I really liked this dish. I paired it with a gorgonzola and carmelized onion pizza. It was a nice healthy side to match it. Next time I may sprinkle some parmesian on top.

Japanese Zucchini and Onions

I really enjoyed this as a side to my grilled salmon. My boyfriend was happy, too. I added a little sesame oil, and plenty of sesame seeds to make sure it got full flavor. i also added shitake mushrooms which were a nice mix. next time i will be sure to cut zucchini even thinner so that it absorbs flavor easily.

Grilled Salmon I

I didn't ooh and ahhh when it hit my mouth, but I definitely felt healthy and satisfied after this meal. I paired it with the "japanese zucchini and onions" recipe from this site. they were nice together. i will make this again, maybe i will let it marinate over night though. i cooked it in the oven also, and it cooked perfectly! thanks!!!

Guacamole Cilantro Lime Cheeseburger

I halved this recipe, as I was just cooking for two. The Guac was awesome. I used turkey ground instead of beef...for a healthier twist and it came out great! (I just used a little extra lime juice because turkey meat is drier) i just eye-balled the cilantro and onions based on what we like and it came out great. My boyfriend said if I was a chef at Dos Cominos (a popular NYC Mexican restaurant) I could charge $20 for a half portion of the guac. IT WAS GREAT!
