About this Cook
I've been described as a women who has one foot in the next century and another firmly on a banana peel, but I can cook! Weight loss as been a journey for me, but I have come to the conclusion that diets simply do not work. How is it we have more diets than ever, yet the obesity epidemic is at the highest rate today than any other time in history? For me, loosing weight is about "clean eating"... this means no more processed or packaged foods. I eat foods in their purest form and organic whenever possible. Not to say that I don't "occasionally" indulge in a dish of pasta or a cheeseburger, but for the most part I'm a purest and I tend to lean toward a more Mediterranean approach to eating. I love food just as much as anyone, but the trick it to find ways to eat healthier without sacrificing taste.
My favorite things to cook
When I'm busy, I like quick and easy foods, but also something healthy. Otherwise, I love to experiment in the kitchen with exotic foods from around the world. I'm really rather eclectic when it comes to cooking.
My favorite family cooking traditions
Since I'm part Mexican I love to cook spicy foods, but I also enjoy Italian, Middle Eastern, Asian and Vegetarian foods.
My cooking triumphs
My own recipes that I invent in the kitchen... Adobe bread, Texas skillet etc.. I love to "create" my own meals.
My cooking tragedies
There have been a few occasions where I have become preoccupied and forgot something on the stove... wella! Burnt casserole! We have a sign in the kitchen that seems apropos. It says "When the smoke alarm goes off, dinner is ready!" -- That would be me!

Homemade Black Bean Veggie Burgers
OMG that was good!!!!! This is definitely a do-over again and again and again... ! These are by FAR better then the expensive ones you get in the grocery store and much better tasting. I topped a whole wheat bun with my black bean patty, guacamoli, onions, tomato slices, spinach and pepper jack cheese with a bit of chipolata mayo. It was messy but melt in your mouth magic!!! Will repeat often. :-)

Fabulous Wet Burritos
Having been raised in a traditional Mexican home, these burritos were just not that good. They were certainly not reminiscent of anything authentically true to kind of good Mexican fare that my mother and so many of my relatives made. Too many canned, processed products (come on, tomato soup?) made this very gringo tasting in my book, and the sodium, fat and cholesterol content was way to high! Not at all healthy! If you're not familiar with traditional Mexican cooking, then this is probably alright. But for me, I was not at all impressed with the quality of this dish.
