About this Cook
I have 3 boys that love it when mom comes to visit or they come to visit me and I cook some of thier special dishes.
My favorite things to cook
Dutch Apple Pie, Enchilda's (I've been told by my father-in-law, no enchilda's no Christmas for me), BAR-B-QUE Beef, sweet & sour chicken/pork.
My favorite family cooking traditions
Christmas is hands down my favorite time of year for cooking and baking. My oldest son has a food allergey to Poultry, so we usually have a prime rib, that in his opinion takes forever to cook as he's hovering over the oven asking is it done yet??
My cooking triumphs
My enchilda's are favorites of my family and friends, I have a few friends that are single and ask for them on a regular basis.
My cooking tragedies
Pumpkin Cheesecake that was so horrible that even the birds wouldn't touch it!!! YUCK!! I've learned to read the recipes alot more closely to match my family's/friends taste in deserts.

Applesauce Cake III
OH MY GOODNESS!!! Make these into muffins :) they are the best, my husband said that these tasted better than the store bought muffins. I made muffins and the cake. The muffins are by far the best, and are a huge hit at work and home.

Michelle's Soft Sugar Cookies
These are great!!! I followed the suggestions of not using cream of tartar just using extra Baking Soda and rolled them out EXTRA thick as they do spread out during baking. Baked for only 7 min, and they were just like the picture thick and soft in the middle. I started used my tart pastry cutter for the first ones. Mistake they were to large and flat, I used a pint glass. Just right!! Will make these again.

Empanadas
OK...I have to admit that when I read this recipe I thought what the HECK??? When I asked a co-worker about it (she's Hopie Indian), she also was wondering. However I continued on and made them. WOW!!!! They were a HUGE hit at my sweeites work, and mine where we both have a strong Mexican work force. Will make these AGAIN, and will use a meat filling next time. They are easy to make and YUMMY for the cold winter days. I didn't use a rolling pin to flatten, I shaped them with my hands as the dough is a bit sticky at first.
