Lentil Soup

An excellent recipe for getting more lentils into your diet. First time I just put all of the ingredients into a crock pot. While good it was not nearly as good as taking the steps the recipe calls for. My only let down was that I was expecting soup, but despite adding 2 extra cups of water it was still stew like. My only other alteration was adding 4 chicken bullion cubes. The leftovers are great on rice.

Pumpkin Spice Bread

Honestly the best pumpkin bread I've ever had. Moist, well formed, and so delicious. The only alteration I made was substituting oj for the water. Next time I will add chocolate chips.

Grilled Halibut with Cilantro Garlic Butter

I normally don't like fish, but this recipe may get me to eat fish on a regular basis! My husband and I both enjoyed it. I grilled the fish inside aluminum foil which helped keep it very moist.

Best Chicken Ever

We loved this recipe. I did not measure the sour cream, just added enough to make a good sticking layer for the corn flakes. I also added a little garlic salt to the sour cream. Overall, excellent.

Pork and Cabbage Supper

I was doubtful that this recipe would be very good, but I had left over pork and cabbage so I decided to try it. It was surprisingly quite good. My husband loved it. Just a note: I didn't bother boiling the soup, I just mixed it really well and poured it over the browned pork chops in a casserole dish(I don't have any other oven safe pan. I also used a small clove of garlic, minced, instead of garlic powder. It's perfect proportions for two people.

Toasted Pumpkin Seeds

I've never toasted pumpkin seeds before, but I thought this recipe was really good. I followed earlier advice to boil the seeds in a strong salt solution and then let them sit out over night. I cooked them at the recommended temperature for about 20 minutes and then turned the oven off and left them in while I did errands. They turned out great!
