Coconut Poke Cake

I followed the recipe and it produced a super sweet, melt-in-your-mouth dessert. If you like tres leche cake, this is very similar, but not as watery. But it is moist, light, airy and just delightful. I brought it to a birthday party and everyone devoured it. Thanks to the reviewer who said to find Cream of Coconut in the alcoholic beverage aisle.

Salmon with Tomatoes

This is restaurant quality. I used sesame oil instead of garlic oil since I didn't have any (just boosted the number of fresh garlic cloves). Didn't have any Parmesan cheese so I substituted very finely shredded mozarella. I also used a can of petite diced tomatoes instead of fresh. Think I will omit the butter next time to keep it healthier. It was so flavorful, I don't think it needed it. This is definitely a keeper!

Steamed Fish with Ginger

I made this with Tilapia. My husband, who is not a fan of seafood (fish in particular), ate it AND complimented it. It was SO easy and so tasty.

Never Fail Pie Crust II

WOW. WOW. WOW. This is the BEST and EASIEST pie crust EVER. It's so flaky and light and delicious. I enjoy baking but have always been intimidated by pie crusts. NEVER AGAIN! I just added the ingredients to my kitchen aid mixer and it came out PERFECTLY. (I used 1 cup of butter and 1 cup of shortening per others' suggestions.) I pressed the crust in my pie plate and used a blueberry pie filling that I got off of this site (SUPER DUPER EASY using frozen blueberries). Baked it in the oven at 385 degrees for 55 minutes. INCREDIBLE.

Chocolate Trifle

Husband, who is one big giant sweet tooth, said this is the best dessert I have ever made and quite possibly the best he has ever tasted! I modified it according to other reviews. Added the Heath Bar Toffee bits and folded the pudding mixture in with the heavy whipping cream (that I had whipped in my kitchenaid mixer until stiff.) WOW was this good.

Broiled Tilapia Parmesan

Wow! What a great way to get my 4-year-old and my 2-year-old boys to eat fish! I only had 1 lb of Tilapia, but I made the full amount of topping mixture. I only used half of it for the fish. The other half? I boiled some angel hair pasta and tossed the hot pasta with the warmed mixture! YUM! I also mixed a bunch of diced green onion into the pasta and fish which not only made the dish pop with color, but flavor as well. This is one of my favorite recipes! thank you!

Easy Sugar Cookies

YUM...the easiest and the best-tasting sugar cookie recipe i've tried. I like the fact that you don't have to refrigerate the dough for hours before actually baking. Because of that, you can't cut them into shapes. But if you're happy with just round cookies, then this is the recipe for you. ALSO, if you like soft cookies, make sure you take them out in 8 minutes, even though they won't be a golden brown. Ten minutes and they turn crunchy after they've cooled. Make them tonight - they're SO easy and most everyone should have the ingredients in their pantry.
