Easy Tuna Casserole

Reviewed: Apr. 17, 2008
so good! i only had cream of mushroom on hand; so, i used that instead. (i wonder if that kept it from being bland as others noted.) also, i added some frozen carrots and peas for color. :p loved that it was so quick and easy. no other changes necessary.

Creamed Spinach II

Reviewed: Jan. 13, 2008
UPDATE - I used one package of frozen spinach and one bunch of fresh spinach. It was probably more than the recipe called for in the end but it was the perfect consistency. I didn't have to add cream cheese to make it thicker/creamier. Still need some added flavor though. I sauteed onion and garlic with the bunch of fresh spinach and added about 2 tbsp of Parmesan cheese plus a dash of salt. Perfect, my way!*****It was really easy to make but bland. Needed a bit work in the end. I added sauteed chopped onions and minced garlic, 1/4 cup milk, 2 tbsp parmesan cheese, and a dash of salt. Even after this, it wasn't as thick/creamy as I liked but it didn't taste that bad. Next time, I will try adding cream cheese as others suggested.

Peanut Butter Cup Cookies

Reviewed: Dec. 30, 2007
the best cookies ive made in awhile. thanks to everyones tips they came out perfect! freeze the peanut butter cups before pressing them into the cookie and pop the tray back into the fridge to keep them from melting into a puddle. my cookies needed at least 10 minutes in the oven.

Fettucine Carbonara

Reviewed: Dec. 3, 2007
Points for being a quick and easy recipe. But, it needed some work for favor. Second time around, I added minced garlic and sauteed onions, salt, and red chili pepper flakes. I like a lot of sauce so I used less pasta as well.

Double Layer Pumpkin Cheesecake

Reviewed: Nov. 24, 2007
I'm not a fan of cheesecake (I made this for my sister) but this recipe won me over! I followed others advice with putting 1.5 cups of filling instead of 1 cup for the first layer and it was beautiful when cut. Also, I probably used about half of a 16oz can of pumpkin puree. Then, baking in a water bath was a good idea for this type of recipe.

Eggplant Parmesan II

Reviewed: Nov. 20, 2007
I halved the recipe and it came out just as good. I did let the eggplants sweat beforehand as several others suggested.

Shrimp Fettuccine Alfredo

Reviewed: Nov. 6, 2007
Luckily, I listened to another reviewer's advice; 1lb of noodles is way too much! I used only half of the package for the amount of sauce made. Also, I made sure to remove the shrimp before making the sauce to avoid it being overcooked. It was delish!

Garlic Mashed Potatoes Secret Recipe

Reviewed: Nov. 5, 2007
Hmm.. I didn't have Romano cheese on hand so I used Parmesan cheese instead. This change required adding a bit more salt. Also, boiling the garlic first was a good idea. It's a good recipe, my brother didn't complain, but I prefer my mashed potatoes creamier.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Nov. 1, 2007
These were really good! It's next day and they are still incredibly SOFT. The only change I made was bake at 375 for 8-10 minutes as suggested by the recipe on Jello's site. Perfect at 9 mins for me. I didn't make any of the changes others suggested. Delish!!

Spaghetti Carbonara II

I must've done something wrong because my eggs didn't help bring the pasta together at all. It was good tasting nonetheless.

Teriyaki Kabobs

Reviewed: Oct. 17, 2007
I marinaded the beef for 8+ hours overnight. Perfect! Only thing I did differently was used regular salt and low sodium soy sauce. Adding pineapples to the kabobs was a good touch, too.

I found a new favorite recipe for potatoes! For the longest time I was using the 'Roasted New Potatoes' recipe on this site. I did without the shallots (none on hand) and it was still great!

Grilled Shrimp Scampi

I loved that the marinade was easy to put together with the readily ingredients. I've tried both grilling them on skewers with veggies and tossing them with cooked pasta but still missing the WOW factor.

Baked Teriyaki Chicken

Covered the dish with foil for the first 30 mins, that helped a lot. I think it took less than an hour to cook through. Great tasting sauce. Used less sodium soy sauce which was a good idea.

Mushroom Pork Chops

I love that it was so quick and easy! Served with the "Pan-Fried Asparagus" recipe. Perfect Friday night dinner for the boyfriend and I. One change was using fresh garlic over garlic salt. So much better this way.
