Iced Pumpkin Cookies

OMG! I thought there was only room for chocolate chip cookies in my heart until I had the iced pumpkin cookies. The pumpkin and the spices and the icing was perfectly balanced.

Wonderful Meatloaf

UPDATE - Had eftover rice. So, I made this again but this time added lots of seasoning - salt, pepper, garlic powder and sugar. Better!*****Wonderful? Try BLAND. My sister and I only picked at the parts coated in the ketchup top layer. I did like being able to use my leftover brown rice than the usual bread crumbs.

Persimmon Cookies I

I used 3 ripe persimmons and the persimmon taste was still too subtle for me. Next time, I will add more. (Update - It might have been the persimmons I bought as I've just cut open one to eat and it was gritty in taste. Also, all the cookies turned soft and black the next day but still tasted fine.) I knocked the 1/2 tsp of nutmeg to 1/4 tsp as I find it an overpowering spice. 15 minutes left my first batch almost burnt! I had better results at 12-14 minutes.

Thyme-Rubbed Steaks with Sauteed Mushrooms

A delicious dry rub! I used t-bone steaks and the backyard grill instead. The mushrooms were the perfect touch. I totally felt as if I was having dinner at some fancy restaurant. (Served with Creamed Spinach II recipe, homemade mashed cauliflower, and store bought mac and cheese.)

Brooklyn Girl's Penne Arrabiata

I had 1/2 jar of spaghetti sauce and chicken breast in my fridge and this is the recipe that came up in the ingredient search. What a good find! Instead of the diced tomatoes & tomato sauce, I used my leftover jar of spaghetti sauce. Also, I sub the hot pepper sauce with red chili flakes and used Italian style bread crumbs instead of plain + same seasonings. One egg was enough for coating and I probably used around 1-1.5 cups of bread crumbs. Instead of drowning the chicken bits in the sauce, I scattered the pieces on top. Yummy!

Spinach and Artichoke Dip

Sometimes I sub the Monterey Jack with Mozzarella cheese. And, I like to add a bit of garlic powder or minced garlic. My guests can't get enough of this dip.

Chicken Breasts with Balsamic Vinegar and Garlic

I skipped dredging the chicken breast in flour and I sprinkled the thyme right onto the chicken breast. The sauce and the mushrooms saved the dish. The chicken breasts came out way too dry.

Spiced Pecans

30 minutes is waaay too much time in the oven. I probably took the tray out around 15-18 minutes. Stir the nuts often, not just once or twice! I substituted vanilla extract for the water.

Banana Crumb Muffins

I didn't have enough butter so I substituted oil in the batter. And, I took advice from another good banana muffin recipe to use 1/2 white sugar and 1/4 brown sugar. Yum-o!! I made a batch in mini muffin trays (15 mins for me). Worked great! Next time more bananas.

Chocolate Chip Banana Muffins

I didn't have any yogurt on hand so I substituted soy milk. And, I used 1/2 white sugar and 1/4 brown sugar as many suggested. There wasn't enough of a banana taste for me the first time around so I doubled it to 2 cups. Delicious! Especially in the mini muffin trays (~15 mins in the oven for me).

Zucchini Parmesan

Being on a low carb diet, this was such an awesome recipe to curb my "pasta" craving. Instead of boiling the zucchini, I sauteed it with the onion and garlic. Then, I made layers of the zucchini mix, spaghetti sauce, and mozzarella cheese to mimic a lasagna dish. Delicious!

Sweet Corn Cake

good! next time i will take other reviewers' advice in order for it to be great. there was too much butter and too much sugar - needs to be cut in half. also, i didn't have any masa harina so i used all purpose flour which didn't make a difference, i think.

delicious! things to keep in mind - heat the pie plate because as soon as i poured in the melted sugar it hardened. also, no where it mentions making a water bath and that's your best bet with these types of dishes.

Best Chocolate Chip Cookies

do not omit the hot water step as i learned it makes the cookies more cake-like without. the extra liquid helps the cookie bake crisp and flat which wouldn't happen otherwise with the high level of flour that the recipe calls for. delicious!!!

Maria's Pepper Steak

The taste was great; however, the technique needed some tweaking. I followed the instructions for the veggies. But, with the meat, I let it sit in 3/4 of the marinade before I grabbed it out and "stir-fried" it. After, I tossed the veggies back in along with 1/4 reserved marinade and enjoyed it over rice. Yum!
