This was really good! I added a couple more avocados because I love avocado. It turned out perfect and everyone loved it. I have lots of leftovers that I will be devouring over the next couple of days!

Creamy Chipotle Chicken

this as DELICIOUS! I can't believe how easy it was to make and the chicken came out sooo moist. I had guests over for lunch and everyone raved over it! It was kinda spicy, so if you don't like a lot of spice I would try either reducing the number of peppers you put in or omitting them altogether.

Best Spanish Rice

I thought this was alright. I was hoping for something that tasted like the stuff they made at the mexican restaurants, but it didn't really for me. Not sure why.

Baked Kale Chips

These were good but I couldn't get all of the pieces to crisp up. Next time I'll try making it in smaller batches. Seemed to crisp up only when there was just one layer of kale on the baking sheet at a time.

Whipped Cream Cream Cheese Frosting

This is probably THE BEST frosting I have ever made. The only thing was that when folding we couldn't get everything to really mix together so I ended up beating it at the lowest speed for about a minute and everything mixed perfectly.
