Pumpkin Dump Cake

Great flavor. I had to cook this much longer than suggested though and had to add more butter to the top powdery layer towards the end to get it to cook evenly.

Apple Spice Dump Cake

I agree that this is more like apple crisp. I followed the recipe, but after cooking this for an hour, the top cake-mix layer was still VERY powdery. I had to add much more butter and cook it almost twice the time.

Brown Rice Breakfast Porridge

I like breakfast comfort foods and was pretty happy with this recipe. Skipped the egg and thought it came out fine. Tried subbing chopped apple and raisins the first time and used fresh blueberries and almonds the second time I made it. Liked the tartness of the blueberries better.

Brown Rice and Black Bean Casserole

I wasn't sure if I liked this at first, but it really grew on me the second day. Added lots more vegetables than called for. Also used the mexican cheese, as suggested by others.

Very Simple Spelt Bread

Wow, this was super-easy to make and very flavorful. I used an 8 grain cereal instead of the seeds and added about 1/8 cup honey along with the molassas. Also some golden raisins. Probably can make this bread a variety of ways. Might try mashing 1/2 banana in the dough next time around.

Quinoa Tabbouleh

My first experience with quinoa, and it was a great one. Made a few changes to add flavor. Cooked the quinoa in chicken broth, adding cumin and dried parsley. Used smaller amounts of the vegetables listed and added chunks of zucchini. Also chopped up about 5 figs and thought it added another very interesting layer of flavor. Gave this 4 stars instead of 5 'cos the recipe might have been a little bland for me without the changes.

Red Snapper Livornese

I used a spicy olive relish in place of the black olives/red peppers and subbed a couple fresh tomatoes for the canned. The dish was very tasty. Thanks.

Bean Soup With Kale

This was my first experience with kale, and it was great. I added to the recipe chopped carrots and celery with onions and garlic; left out 1 c. of broth; extra spices; and threw in some turkey kielbasa. It was delicious. I think it may have been a little boring for me without the extras though.

Michelle's Famous Washed Cranberry Sauce

This is so simple to make. I used OJ instead of water, as suggested by others, but cut the amount by 1/4 c. Also threw in a handful of dried cherries and a chopped apple. Yum!
