Brooke's Best Bombshell Brownies

Hard to go wrong with butter, sugar and cocoa but these were very good brownies. I used dark chocolate cocoa and they came out heavenly.

Best Brownies

A quick round in the kitchen and you'll have some of the best brownies ever. This recipe is classic, beat the eggs before and don't over beat the mix. I have a feeling a couple of handfuls of walnuts will make these precisely the way I like my brownies. Update* I used 1/4 cup applesauce and 1/4 cup of the butter. Only used about 2/3 cup of brown sugar instead of 1 cup white. More healthy and great for the chocolate cravings. Next time I'll try all applesauce and leave out the butter.

Banana Muffins with a Crunch

Delicious recipe but did a few of my own substitutions of course. No walnuts, so I doubled the granola. Sprinkled the tops with granola and coconut. Reduced vanilla to 1 tsp and added 1 tsp of almond extract. YUMMMMMMM and they look divine!

Maple Ginger Cake

I made this for an office thing and everyone really loved it. I did a basic vanilla glaze and everyone commented it was perfect for breakfast. Not too sweet but flavorful.

Peanut Butter Oatmeal Cookies II

As for a no-bake cookie these were a great little find. I tweaked mine to make them a little more healthy. Some tips: Reduced sugar 1 1/2 cup & used half brown sugar, reduced butter to 1/3 cup, didn't have cocoa, used vanilla and added muesli with the oats. Next time I will make them even healthier because they didn't lack in taste at all! Great easy recipe that totally hit the sweet spot for me.

Honey Bun Cake II

Wow, this cake was so sweet it made my teeth ache! I will probably never really make this again but if I did I would make it healthier. You definately didn't need extra sugar in the cake batter and too much sugar for the filling. I guess that's what a honey bun tastes like though!

Aunt Mary's Eggplant Balls

This was very good but I couldn't give it a 5 because I felt like it could be done a little better. The flavor was good but I added some of my own seasonings. I felt like they needed to be bound a little better together. A friend suggested ground up sunflower seeds or maybe ground up pine nuts. I think I'm going to try that next time and yes, there will be a next time..

Addictive Sweet Potato Burritos

I have never had the pleasure of a sweet potato burrito until this one. It is truly amazing and I know I will be making this one time and time again! I am a long time vegetarian and wondering how I missed out on this delicious combination. I look forward to experimenting with the spices and adding some fresh cilantro! I just mixed together my mashed sweet potatoes and the bean mixture, then stuffed the burrito. Sweet potatoes are meant for burritos, trust me!

The Perfect Chocolate Chip Cookie

The Worst Chocolate Chip Cookie I've ever made! I made these because I was snowed in with no butter. I did not eat a single cookie, I knew when I tested the batter that they were horrible. Taste like vegetable oil, YUCK! I guess if you have a limited diet and must avoid butter but I think I'd rather skip the cookie myself.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Love Gobi Aloo and did add some veggie broth and cream to this dish. The cook time was also much longer than indicated but the end result was fantastic. It is fine to add some broth, milk or other liquid to moisten this up. Tomatoes would have been a good idea too. I also found the spices a little mild (could have been the lack of mustard seed) and definately spruced mine up with extra chili peppers. Be creative with this one.. Love it!

Big Soft Ginger Cookies

I love these cookies and so does everyone I share them with. I've passed out a few copies of this recipe to friends. I've found that the cookie is done when it begins to crackle a bit on top. Of course the sooner the softer for these cookies. The 10 minutes is just about perfect for a soft cookie but longer for a bit for a crunchy cookie to accompany milk. yummmmmm The best!

Creamy Veggie Potato Stew

Great standard recipe for veggie stew to start and lots of room to add ingredients for your preferences. I don't believe you need the whole cream, I used 2% milk seemed a little overboard. You may need to add a little additional flour. I also added other veggies, beans, spices to this stew. Very satisfying..

Ibby's Pumpkin Mushroom Stuffing

This was a big hit at Thanksgiving. I made sure to cut the sugar in the pumpkin bread and definately doubled mushrooms, celery, onions. Very rich and very flavorful. I will definately make this one as a major holiday treat again.

Downeast Maine Pumpkin Bread

Not worth the hype at all. This bread came out spongy, oily and once covered soggy. Use the Pumpkin Bread IV, it uses butter instead of oil and adds baking powder. The result is much more dense, crusty and bread like. This is more like a cake.
