Caprese Quiche

Yum! (I only had 6 eggs, though. So I did use 1/2C heavy cream and 1/2C skim milk.) The caramelized onions really made a nice touch.

Limehouse Chicken

I love this recipe the way it was written and my five stars are for that! (If you don't like recipe changes, just stop reading now.) However, should you go to make one evening and find yourself without any limes, try these tweaks: 1 tangerine (or clementine, etc.) zested and juiced 1 T jerk seasoning (instead of paprika) 2 T white sugar (instead of brown) 1T red pepper flakes (instead of mint) You'll still get the delicious crunch and citrus zing, but with a hint of heat.

Rubbed and Grilled Pork Loin

This was our first time grilling a pork loin and it was fabulous! We used a much smaller loin -- only 1.8 pounds -- so the cooking time was only about 45 minutes total. I'm thinking of just mixing up a jar of the rub to have on hand, making this super easy to throw together, with virtually no clean-up.

Chocolate Chip Banana Muffins

Mine came out of the oven literally ten minutes ago. I've already eaten two. These are awesome!! I only made two minor changes -- vanilla yogurt instead of plain because that's what I had, and dark chocolate-covered pomegranate seeds instead of chips because I thought it would be delicious. And it is. Moist, tasty, mmmmmm!

BAKER'S® ONE BOWL Chocolate Bliss Cookies

Oh my goodness!! I"m not sure if it's me or my pregnancy talking, but these are some of the best cookies EVER. Rich, chocolately and chewy -- exactly what I was looking for. I didn't have any Baker's chocolate around the house, so I just split a bag of Nestle Semi-Sweet morsels in half instead. Also, I'm not a fan of nuts so I upped the flour as the recipe note said to do. I did add some coconut at the last minute just because and it all turned out FABULOUSLY. Next time I'm considering adding orange zest and extract to give them an exotic punch, not that they need to be any better. YUM.

Crispy Butterscotch Cookies

Fabulous!!! I've made them twice now, and we love love love them in our house. The second time, I doubled the recipe, used Cocoa Krispies instead of plain and tossed in some coconut. I had a hard time waiting until they were baked to eat them!

Sweet Potatoes With Feta Cheese

This is a great, healthy way to do sweet potatoes. My husband is a feta-fanatic, so any thing I can do to get him to eat well is a plus. I broil them just a bit longer to really crisp them up.

Spinach Chicken Parmesan

This is a new favorite in my house --even with my "Chicken again??" husband. I add some sour cream to the milk and up the red pepper and garlic factors as well. Last time we tried it with goat cheese instead of parm -- EXCELLENT!!
