Baked Kale Chips

Delish! I baked mine for about 7 minutes in a glass dish at 375. I agree with some others that spacing the leaves out a bit and not stirring while cooking gave the best results. Also, use a little less salt than you think you should.

Ginger Shrimp with Fried Rice

Very good. I only follow the recipe for the sauce, and threw in whatever veggies I have on hand. I also usually add peppers to this one to heat it up a bit.

Pretty good. I just used regular old flour and cornmeal, since I didn't have any self rising on hand. I also used vidalia onion (it's a sweet onion), and a bit more sugar. I eyeballed the liquid, so couldn't tell you if I used more or less than the recipe called for.

Never Fail Pie Crust II

I'm more of a butter-based pie crust kind of gal, but this one is good. If you've never made a scratch pie crust, or never made it with success, this is the recipe to go with. It won't let you down.

Daddy's 'If They'da had This at the Alamo we would'ha WON!' Texas Chili

Tastes like home! This recipe was great, but I like my chili a little more spicy, so I doubled the jalepenos and added cayenne (about the same amount as the chile). Turned out great, and I will definitely be making it again.

Sauceless Garden Lasagna

Pretty good, I made this with whole wheat noodles and more cheese. I squeezed the juice out of the tomatoes before slicing and let the layered lasagne sit overnight before baking. It didn't come out with too much liquid. I think it needs a little more flavor though.

Simple Pancakes

Very tasty and easy as promised. I used whole wheat flour, added butter instead of margarine, and used a little less oil because I wrote the recipe down wrong. These may very well be our new Saturday morning pancakes.

Brown Sugar Banana Nut Bread I

Loved it. I added about 1 1/2 to 2 cups walnuts and a bit of cinnamon, nutmeg and clove to the dry ingredients. Very easy and delicious. I think this is my new banana bread recipe!

Shrimply Delicious Shrimp Salad

Quick and easy, particularly if you're already making shrimp. I use some lime cilantro marinated shrimp that I had cooked on the grill, used lower fat mayo and added cayenne and cilantro. I would cut the shrimp into smaller pieces as someone else recommended. I also found it a little too "eggy" and would use just the whites in the future.

Tomato Chicken Parmesan

Pretty tasty, It didn't get that crunchy crust, but I used seasoned breadcrumbs that I made that day that weren't as dry as I would have liked. I've made this several times and it has always come out well.

Honey-Ginger Grilled Salmon

This was great, and was very quick and easy. I used fresh chopped garlic rather than the garlic powder and grilled it on a cedar plank over charcoal. Very flavorful and the honey made for a beautiful glaze on the salmon.

Oatmeal Chocolate Chip Cookies II

This recipe didn't make nearly as many cookies as it claimed. Mostly, because we ate most of the dough before we got them into the oven. I added a bit of cinnamon and nutmeg to the batter and used regular oats instead of the quick-cook and they turned out just smashing!

Butter Flaky Pie Crust

I don't know how I feel about this one. I made this crust for a Sweet Potato Pecan Pie (also on this site) and it came out chewy instead of flaky. It was still very tasty, but not quite the texture I was looking for - could have been that I handled it too much, could have been the filling. I didn't chill it for the whole time recommended, but didn't have any trouble rolling it out - once cool, it was easy to roll on a little waxed paper sprinkled with flour (I do live in the desert, so humidity's not really a problem for me). I added a bit of nutmeg and ground clove to the mix and that was delicious. I made enough for two pies and only used half, so I will try it again in a week or so and see what I come up with.

Sweet Potato Pecan Pie

YUMMY! This pie was absolutely delicious, and was a hit at Thanksgiving. I accidentally used half-and-half instead of light cream, but that worked out fine. I didn't find the sweet potato mix spicy enough, so I doubled the spices (more or less) and added a little nutmeg. The sweet potato mix came out to be FAR more than my 9 inch pie could handle, so I made a few small tarts to use up the extra. As someone else said, watch the sugar mixture on the top VERY carefully - mine was done in just under 2 minutes. I also tried to add whole pecan halves on the top, but they burned under the broiler - I would say if you are going to add "decorative" pecans, do it just after you pull the pie from the broiler, while the sugar is still soft.
