Mom's Ginger Snaps

My coworkers proclaim this the best cookie ever. I double the spices but other than that, I haven't changed it. Every time I make these, I have to double the recipe. I make the cookies dime size. I've made this recipe about 20 times since I first discovered it. I won first prize at the county fair with these so I guess now they're award winning lol The whole house smells like Christmas when these are baking. They're fast, they're easy and they're really good. I will be giving batches of these to my coworkers for Christmas gifts.

Angela's Awesome Enchiladas

Shredding the chicken doesn't have to be hard. If you have a kitchenaid (or similar) mixer, use the paddle attachment and shred the chicken in minutes. I have shredded beef, pork and chicken this way. It works best when it is hot but works cold too. Also this recipe is fantastic. I used the packaged mexican shredded cheese with mine. Next time i'm going to try corn tortillas since my husband prefers those.

Slow Cooker Honey Garlic Chicken

I didn't realize I was out of honey until I started cooking the chicken, so I used a little brown sugar instead. I was very pleased with the flavor of the chicken but couldn't eat the pineapple in the sauce - it picked up way too much of the garlic/ginger flavor. I also added some chicken broth to the soy sauce mix to lighten the flavor some. I'll probably omit that next time and just use the pineapple juice instead of the fruit. It truly does taste like teriyaki chicken so if you don't like teriyaki - stay away from this recipe. I served it over rice w/ veggies on the side. My son liked it but agreed that the pineapple chunks didn't taste very good and picked his out as well.

Mexican Casserole

I also got creative with it. I added instant rice, more cheese, salsa, black olives, and since we don't like beans I left those out. I like the idea of adding green chilies. I think I'll do that next time. The only thing that takes the longest is cooking the chicken. The rest of this recipe is so quick and easy that I've made it several times. My teenager doesn't like mexican food really and he'll eat this every time I make it. This is an excellent starter recipe and is almost as good as leftovers. Only problem is when reheating it, it does tend to dry out so I would add water and salsa.

Old-Fashioned Cheese Potatoes

This recipe is easy and quick. My son loved it! I used a little more cheese on top but found it wasn't necessary. I too used a larger dish with good results. I didn't add garlic and onion but probably will next time. I thought it was slightly bland (I like highly seasoned food) but my son said it was great.
