Guacamole

This is a fantastic recipe! I have made this a few times, and each time I realize I love it more than the last. I most recently made this so I could use it as the dressing on grilled chicken sandwiches, and it was simply delicious (and perfect in place in mayo). It is healthy and tastes good…these recipes are not easy to come by! Thanks for posting this!!

Dennie's Fresh Lobster Salad

Delicious and I will make this again soon! I made this for a ladies lunch date, and it was very yummy. I liked that there was not a lot of mayo in this recipe; mayo is usually too overpowering to great New England lobster…it just isn’t necessary. Adding the butter was perfect, and a gem of an idea! I did take the suggestion of another reviewer and add a pinch of dill. I also used black pepper, not white. Thanks for posting this recipe!!

Fantastic…so yummy! Nobody could resist these! This was a perfect “cheer me up, summer is coming” type treat for the middle of winter! These are all the goodness of a true s’more made over a camp fire wrapped into neat little bars!

Delicious Black Bean Burritos

Fantastic! Thank you for submitting this! I made this for a crowd…and the crowd had rave reviews. I didn’t think that everyone would enjoy this, and figured some of the other more “common” dishes made would be more of a hit. I was wrong, even the meat loving men liked this veggie dish and so I will make it again for sure. I took suggestions from others and used 8oz of cream cheese, added diced tomatoes, and kicked up the spices. Delicious!!

Anniversary Chicken I

Overall I thought this was very good. I will make it again for sure. The next time I make this, I will first make sure I find a thick yummy teriyaki sauce. I think that is a big key to this dish. Although the one I used was ok…I think the dish could improve if a better sauce was used. Thanks for the recipe!

Onion Soup Pork Chops

I took the advice of others and used whole grain brown rice in place of the wild rice. My husband is not a big fan of the wild rice anyway, so I was glad to see the suggestions made by cooks! I also only used 2 ¼ cups of water, and that amount was plenty. Overall the pork was very tender and moist and my husband and I both loved it. I would try adding veggies to the rice next time! I will be making this again for certain! Thanks for the recipe!

Pasta with Gorgonzola and Sweet Onion

It is hard to rate a recipe when you make changes to it, but I have to give credit to Lisa for giving me the idea! Thanks Lisa! 5 Stars! I made the recipe for 2, so the ingredient amounts may seems far less than what was originally called for. I browned ½ the onions with 4 stripes of bacon (bacon chopped into small pieces), I added garlic once browned. I added the balsamic as suggested by Lisa. I put the onion mix into a smaller bowl. In the pan I browned pork sausage (1/2 package J.Dean), and then added the sausage to the mixture in the bowl. I used all 4oz of the gorgonzola. I cubed it added it to the bowl mixture. I put the entire mixture into a low temp oven. (waiting for my husband to come home). I pan fried leeks and set them aside on paper towels. Once the pasta was boiled and drained, I tossed the onion/sausage mix in. I topped off the pasta with the leeks! Served with a warm loaf of crusty bread! My husband loved every bite!! I will be making this again for sure! Thanks Lisa for the idea!!! I would never have thought to blend the balsamic with the gorgonzola!!

Chicken Chimichangas with Green Sauce

Overall this was certainly a crowd pleasing recipe! I used a store bought rotisserie chicken, that made making this so quick and easy. One tip I would suggest is to watch the temp of the oil. The oil should be hot enough to brown the tortilla, but not too hot so that the tortilla browns too quickly not giving the chicken and cheese mixture time to melt. Mine browned too quickly so after I set them on a paper towel I transferred them to a cookie sheet in a warm oven. This actually worked out well for me, it allowed me to finish other dishes I was working on, and gave the cheese more time to heat up and melt. The tortilla remained crispy and delicious! Also, I made too much…but the leftovers were easily reheated in my toaster oven. I will never be able to have “taco night” again, without making this recipe too! I look forward to making it again soon! Thanks for posting it!

Slow Cooker Roast Beef

I made this for a group of 12. I doubled the recipe to accommodate for everyone. I cooked the beef on low (in the slow cooker) for about 16 hours, and then kept it on warm for another 2. This was a hit meal to say the least. People could not believe how simple it was when I told them about how it was made. I will make it again!

Raspberry White Chocolate Mousse

Delicious! I used the filling to stuff small flaky pastries (brought pre-made at the grocery store). I cooled them in the refrigerator. When I served these I put them out with a small glass “gravy” boat so that guests could drizzle the extra sauce over the top of the pastry. They were a hit and went fast! I will make these again!

Blue Cheese and Pear Tartlets

I received a mix reaction from the crowd, but I love Blue Cheese so I thought these were very good. I will definitely make this again, but next time I will use more pears and less blue cheese (to appease the crowd).

Asparagus Quiche

This was so fantastic! What a combo of flavors! I also cooked the asparagus in some of the bacon grease as others has suggested. I used fat free half & half and it didn’t seem to have any effect on the taste! I can’t wait to make this again!

Sausage and Apple Stuffing

My guests all enjoyed the stuffing! I will hold onto this recipe as a favorite! Yum! I liked the sausage with the sweet tart goodness of the apple! Delicious! I used cubed breadcrumbs, and will use that style again.

All I can say is that these came out simply delicious! My guests loved them! I did substitute the walnuts with Almonds due to an allergy to walnuts. Overall this is a recipe I will definitely keep and make again.

Baked Brie in Puff Pastry

This was delicious and my guests really enjoyed it. The next time I make this I will be sure not to over cook it. I left this in the oven for too long which caused the cheese to melt too much. I had to put it in the refrigerator to get it to solidify enough so that it could be cut. Also, after the cheese cooled, I spread a roasted onion and garlic jam on the top, it was a great!

All American Roast Beef

I followed the temp instructions etc, and everything went smoothly! The meat was tender, medium rare, and overall a hit! I added beef broth and sliced shallots to the bottom of my roasting pan while cooking. This made for a great gravy once thickened. I served this with mashed sweet potatoes and baby peas. My husband kissed me and said he loves his cook! hahahah

The Best Sweet and Sour Meatballs

These were the best! I have since served them three times (three different parties), and each time they are a hit. I cheated and bought frozen italian meatballs. I also added a 1/4 teaspoon on ground ginger. This recipe is yummy, fast and easy! Thanks!

Pesto Cream Sauce

My husband really liked this dish! We omitted the shrimp, since he doesn’t like seafood. Instead I added Italian sausage (with the casing removed). I added some red pepper flakes to “spice it up” a bit! I served this over homemade Ravioli. Overall this was very yummy and I will make it again. Thanks!!
