Caramel Apple Cupcakes
I substituted the frosting by just mixing white frosting with caramel topping.

Autumn Cheesecake
I changed the bottom to all graham cracker crumbs because I didn't have enough pecans. My coworkers loved it and they all said it was better than a restaurants.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.
I used devil's food cake mix instead because that is what I had on hand. I used vanilla frosting and decorated with mini chocolate chips. I had issue with the baking time. When i took it out at the time suggested the cupcake was still runny. I put it back in longer but of course then the cookie dough was cooked too long. I will try again watching the cupcakes a little more carefully.
