The REAL No-Guilt Chocolate Pudding

SO rich, it's hard to believe this yummy dessert is made with avocado. I made our version low-carb by substituting Splenda and sugar free maple. It tastes perfect and was a snap in the food processor.

Good ratios and easy to follow directions...however, use a smaller pan unless you want thin bars. I used a 8X8 and it was just full.

Pie Crust IV

I felt like a baking pro when I easily rolled this pie crust. I used my food processor to combine all the ingredients. I doubled the recipe with no adverse results. The crust looks good enough to eat!

Grandpop's Special Chocolate Cake

An easy and moist chocolate cake--with a kick of caffeine! I made half the recipe and turned it into a mini layer cake. It was a hit!

Slow Cooker Buffalo Brisket

Peanut Butter and Jelly Thumbprint Shortbread Cookies

My head reviewer (husband) calls them "thick" and required milk to wash down the cookies--which he says is a good thing. He tried the shortbread with grape jelly and a dollop of peanut butter. The cook (me) reports they are very easy to make, didn't stick to the silpat, and held their shape well. All around winner!

Easy Cheesy SPAM®-wiches

This was our first encounter with SPAM. We used the low-fat SPAM with low-fat mayo and shredded cheddar. The roll was a hoagie bun. My lead reviewer says he would definitely try these again!

Lite Carrot Cake

A nice light cake! My co workers enjoyed a piece and some had seconds! One commented that it was nice--and not too sweet. The egg white portion almost created a marbled effect when folded in to the batter.

Oatmeal Butterscotch Cookies

My taste testers said they were crispy on the outside, with a nice chewy center. My only difficulty with the recipe was removing them from the pan. I used a Sil-Pat and needed to wait until they were completely cooled to pull them off in one piece.

Octopus in Tomato Sauce

My husband and I REALLY liked this dish! I changed the recipe to make it with what I had on hand and with slightly less fat/calories. I omitted peas, potatoes, and olives and used basalmic instead of the wine. It was such a great flavorful supper! I have added it to my recipe book for sure!
