Turkey Garbanzo Bean and Kale Soup with Pasta

This was very good and easy to make. The one thing I will change is to make only 6 to 8 ounces of pasta; 16 ounces of pasta is WAAAY too much for this recipe!

Pork Picadillo

Pretty good. If I make this again I would add some seasonings to the pork. A flavor packet or two from Ramen noodles would really perk it up. I would also eliminate the raisins, as having them in the mix was more of an oddity than a flavor enhancer.

Smoky Chipotle Hummus

Amaranth Pancakes

My boyfriend raved about these, and I thought they were very good, too. I did not have arrowroot powder, so I substituted an equal amount of potato starch. I didn't have any trouble with the pancakes sticking to the pan as other reviewers did, so my substitution may have been the key. The pancakes were a bit thin, yet still fluffy (not dry) and the flavor was great. Will try adding just a bit extra potato starch next time to see if that makes them a little thicker.

Homemade Black Bean Veggie Burgers

These are delicious! I've made these several times and even meat-eating friends enjoy them. Don't over-mash the beans or the burgers will be mushy. They're better with a bit of "meaty" texture. I made mine vegan by replacing the two eggs with a mixture of 4 T potato starch + 4 T water. I usually reduce or eliminate salt in recipes, but I found these to be better with the addition of 1/2 tsp salt. Pleased with the results when using Thai chili sauce and plain bread crumbs.

Traditional Style Vegan Shepherd's Pie

This was soooo delicious! My only substitutes were rice milk instead of soy milk (was good, but want to try hemp milk next time) and rice "cheddar" instead of soy "cheddar". Potato mixture was a bit too liquid and "beef" crumbles were too crumbly. Will make adjustments for these next time. Thank you for this amazing vegan recipe!

Took this to a party and everyone raved about it - even one person who doesn't usually like salads. I followed the recipe exactly, but added mandarin oranges and feta cheese. Fabulous!

Ground Beef Zucchini Skillet

A good basic recipe, but it was so bland that I had to triple the spices plus add garlic powder, worchestershire, a beef bouillon cube, and a can of tomato paste. Used half a diced onion instead of the dried minced onion, and added fresh garlic. Added a cup of cooked ditalini pasta at the end to round it out. My result was pretty good, but I can't rate this recipe higher than 3 stars due to the extensive additions I had to make in order to give it some flavor.

Punch

My Country Style Steak

I don't usually enjoy the consistency/toughness of cube steaks, but decided to try this recipe because of the many high ratings. This is the first time I have ever made cube steaks at home and I am very glad I tried it. These were surprisingly tender and very tasty! I followed the recipe with two small changes: 1) substituted minced garlic for the garlic salt and 2) omitted the salt (to taste). I will definitely be making this again. Thank you for the first cube steak recipe I actually enjoy!

Classic Macaroni Salad

The first time I made it with Miracle Whip, which made it far too zesty. I added some cheddar cheese and Ranch dressing to tone it down. Did not have green pepper, but added frozen peas (rinsed in a colander to thaw). After 6 hours in the fridge, the flavor had mellowed and everybody loved it. The second time I followed the recipe, including using regular mayonnaise. I liked the Ranch dressing and cheddar cheese, so I added them again. Also diced some ham and tossed that in. Made it a couple more times and followed the recipe exactly. Making it again today, but with a bit less mustard and sugar, as that is what I prefer. This is a great recipe that can be easily tweaked according to your tastes and what you have on hand. For best flavor and consistency, be sure to 1) let the sauce-veggie mix "mellow" in the fridge for at least a couple of hours and 2) not mix the sauce into the pasta until an hour or so before serving.

Vegetarian Gravy

I have been looking for a good vegan gravy recipe, and I'm thrilled to have found this! I made a few changes based on my preferences and what I had on hand. First, I did not want chunky gravy, so I substituted 1 tsp onion powder and 1/4 tsp garlic powder for the fresh onion and garlic. Instead of using prepared vegetable broth, I diluted 2 rounded tsp of "Better Than Bouillon" vegetable base in 2 cups water. I discovered I was out of sage, so substituted savory. I also used half the amount of salt called for. The gravy quickly became too thick during cooking (I started with less oil than called for because I was not going to saute onion and garlic), so I added an additional cup of the water and veg base mixture and that worked out just fine. The gravy was rather salty when I tasted it by itself, but it was fine once we put it on our food. Next time I will further reduce the salt. With the ease of preparation, use of items I typically have on hand, and the authentic gravy taste, this vegan gravy was a very pleasant surprise! I am a BIG fan of gravy, so I will definitely be making this many times in the future. Thank you for posting a real winner of a recipe!

Easy Olive Oil, Tomato, and Basil Pasta

I followed the recipe exactly and found the recipe to be overwhelmed by olive oil and pasta, so I added a few things: extra garlic, one extra tomato, a half bunch of sauteed asparagus, and some balsamic vinegar and salt and pepper to taste. This made it much better and more satisfying as a main dish. Next time I will make these same changes, but also reducing the olive oil to perhaps 3/4 cup and adding some raw red bell pepper.

Vegan Mexican Stew

Quick, easy and very tasty! I used the one-pot method suggested by another reviewer. The only other things I did differently were 1) omitted the seasoned salt (I didn't have any) and 2) used a can of plain diced tomatoes and a can of green chilies because I did not have the tomatoes with chilies already in them. Everyone loved it and had seconds. This is a keeper!
