Easy Sugar Cookies

Reviewed: Dec. 25, 2007
This recipe provided very yummy results! I used an electric mixer to cut butter and sugar together; rolled dough into balls that I flattened with a glass bottom dipped in color sugar; baked the cookies for 7 minutes and cooled them on the cookie sheet for 1 minute before moving to a wire rack. My family likes cookies to be crispy on the outside and chewy on the inside, and these were perfect. Still chewy inside after a couple of days. I'm going to make this recipe again, but this time I'll try rolling the balls in cinnamon-sugar and not flattening them.

Crispy Orange Beef

Reviewed: Jun. 24, 2008
Delicious! I cooked the top sirloin in grapeseed oil (using only 1/4 of the oil specified) and doubled the sauce, both of which I will do again. This recipe is a bit more labor-intensive than I usually prefer, but it was well worth the extra prep time.

Classic Macaroni Salad

Reviewed: Aug. 18, 2008
The first time I made it with Miracle Whip, which made it far too zesty. I added some cheddar cheese and Ranch dressing to tone it down. Did not have green pepper, but added frozen peas (rinsed in a colander to thaw). After 6 hours in the fridge, the flavor had mellowed and everybody loved it. The second time I followed the recipe, including using regular mayonnaise. I liked the Ranch dressing and cheddar cheese, so I added them again. Also diced some ham and tossed that in. Made it a couple more times and followed the recipe exactly. Making it again today, but with a bit less mustard and sugar, as that is what I prefer. This is a great recipe that can be easily tweaked according to your tastes and what you have on hand. For best flavor and consistency, be sure to 1) let the sauce-veggie mix "mellow" in the fridge for at least a couple of hours and 2) not mix the sauce into the pasta until an hour or so before serving.

Barbie's Tuna Salad

Reviewed: Aug. 18, 2008
This will turn out pretty mushy if you use chunk light tuna. Either cut back a little on the mayo or serve only with crackers (unless, of course, you like messy sandwiches). Seems to have the best flavor after sitting in the fridge for a few hours so that all of the dry ingredients are rehydrated and the flavors get blended.

BLT Pasta Salad

Reviewed: Aug. 31, 2008
Aside from using the Bacon Ranch dressing as others have suggested, I followed the recipe. Unfortunately this salad lacked interest and flavor.

Delicious Ham and Potato Soup

Reviewed: Sep. 18, 2008
True to its name, this Delicious soup was a big hit. Besides being tasty comfort food, this soup is also quick and easy to make. It is a classic recipe that I will use many times in the future. Two suggestions: omit the salt and use half the pepper.

Ground Beef Curly Noodle

Reviewed: Sep. 18, 2008
I wasn't sure about this recipe, but it was easy to make and turned out great. The kids really ate it up, and Mom (that's me) really liked it, too. I changed a couple of things: used ground bison instead of ground beef, and used 2 packages of noodles with 1 flavor packet. Add beef or veg broth if you need more liquid.

Broiled Tilapia Parmesan

Reviewed: Oct. 17, 2008
Easy last-minute entree. Flavor and presentation are sophisticated enough to serve to company. I followed the recipe except that I used Miracle Whip instead of mayo and eliminated the lemon juice. I also added a few other spices as suggested by other reviewers. Served with baked potatoes and frozen peas. My young, somewhat-picky son ate every bite of his fish! I'll be making this one again.

Albondigas

Reviewed: Oct. 17, 2008
Tasty, but a bit too spicy with medium salsa. Next time I'll try 1/2 mild salsa and 1/2 medium salsa. I substituted beef broth for the water and 1 pound ground bison for the beef. Also used only 1/2 as much onion as called for. Easy, balanced meal to make with items I usually have on hand. We'll be having this one again.

Bacon, Potato, and Egg Taco Ole

Quick and easy - just what I needed! I used diced ham instead of bacon and it turned out great.

Warm Greek Pita Sandwiches With Turkey and Cucumber-Yogurt Sauce

Reviewed: Oct. 29, 2008
I used diced roasted turkey breast and these came out great. The sauce would have been better if I had *grated* the cucumber as the recipe suggests, instead of finely chopping it. We'll be having this one again.

Easy Pork Chop Casserole

Reviewed: Oct. 4, 2009
This recipe is easy and tasty. It is very high in sodium though, so not recommended for those on a low-sodium diet. Next time I will reduce the heavy salt flavor by using low-sodium soup and only half the onion soup mix. Also, the title is misleading because this really isn't a casserole.

Oven-Fried Potatoes

Reviewed: Nov. 8, 2009
Easy and good flavor. My suggestions: Leave the skins on and cut into lengthwise potato fingers. Eliminate the oil and just spray a cookie sheet with PAM before placing potato fingers (skin side down) on the cookie sheet.

Smoky Chipotle Hummus

Reviewed: May 15, 2010
The flavor was pretty good, but the consistency was much too watery. If I make this again I would add more garlic and a lot less water (maybe substitute some other liquid).

Doreen's Ham Slices on the Grill

Delicious way to do ham on the grill. I have made this before without the lemon juice and a bit less horseradish and the sauce stuck to the ham more like a glaze. Yum!

Chicken Nachos

A bit bland for my tastes. The cheese would be much better if it were saucy, like regular nachos.

Pork Picadillo

Reviewed: May 15, 2010
Pretty good. If I make this again I would add some seasonings to the pork. A flavor packet or two from Ramen noodles would really perk it up. I would also eliminate the raisins, as having them in the mix was more of an oddity than a flavor enhancer.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: May 15, 2010
Pretty good, but the balsamic was somewhat overpowering after several bites. Would be good to offset the vinegar flavor by having a bland or creamy side dish to serve with it, such as potatoes.

Foolproof Beef and Broccoli

Ground Beef Zucchini Skillet

Reviewed: Oct. 19, 2010
A good basic recipe, but it was so bland that I had to triple the spices plus add garlic powder, worchestershire, a beef bouillon cube, and a can of tomato paste. Used half a diced onion instead of the dried minced onion, and added fresh garlic. Added a cup of cooked ditalini pasta at the end to round it out. My result was pretty good, but I can't rate this recipe higher than 3 stars due to the extensive additions I had to make in order to give it some flavor.
