Italian Dressing Mix

Rainbow Pasta Salad II

This was very easy and pretty darned tasty. I used the homemade Italian dressing recipe found on this site. Next time I make this recipe I will cook the pasta a bit less so it is firmer. I also think the flavor would be improved by adding diced green pepper and crumbled feta cheese.

Oven Roasted Potatoes

Dirty Rice

This is a quick, easy, well-balanced meal with good flavor. Squeezing lime juice on top definitely adds that little extra to the dish. If you use the rice:water ratio and timing in this recipe, your rice may not turn out right, so be sure to follow the directions for the specific type of rice you will be using. For example, mine is 1 cup rice to 2 cups water for 40 minutes.

Vegetarian Gravy

I have been looking for a good vegan gravy recipe, and I'm thrilled to have found this! I made a few changes based on my preferences and what I had on hand. First, I did not want chunky gravy, so I substituted 1 tsp onion powder and 1/4 tsp garlic powder for the fresh onion and garlic. Instead of using prepared vegetable broth, I diluted 2 rounded tsp of "Better Than Bouillon" vegetable base in 2 cups water. I discovered I was out of sage, so substituted savory. I also used half the amount of salt called for. The gravy quickly became too thick during cooking (I started with less oil than called for because I was not going to saute onion and garlic), so I added an additional cup of the water and veg base mixture and that worked out just fine. The gravy was rather salty when I tasted it by itself, but it was fine once we put it on our food. Next time I will further reduce the salt. With the ease of preparation, use of items I typically have on hand, and the authentic gravy taste, this vegan gravy was a very pleasant surprise! I am a BIG fan of gravy, so I will definitely be making this many times in the future. Thank you for posting a real winner of a recipe!

Easy Amaranth Pancakes

My boyfriend raved about these, and I thought they were very good, too. I did not have arrowroot powder, so I substituted an equal amount of potato starch. I didn't have any trouble with the pancakes sticking to the pan as other reviewers did, so my substitution may have been the key. The pancakes were a bit thin, yet still fluffy (not dry) and the flavor was great. Will try adding just a bit extra potato starch next time to see if that makes them a little thicker.

Colombian Lentils

Used 2 parts vegetable broth to 1 part water. Definitely needs more liquid than called for. Keep a close eye on it so the lentils don't burn to the bottom of the pan. Served over jasmine rice. Good flavor.

Homemade Black Bean Veggie Burgers

These are delicious! I've made these several times and even meat-eating friends enjoy them. Don't over-mash the beans or the burgers will be mushy. They're better with a bit of "meaty" texture. I made mine vegan by replacing the two eggs with a mixture of 4 T potato starch + 4 T water. I usually reduce or eliminate salt in recipes, but I found these to be better with the addition of 1/2 tsp salt. Pleased with the results when using Thai chili sauce and plain bread crumbs.

Easy Olive Oil, Tomato, and Basil Pasta

I followed the recipe exactly and found the recipe to be overwhelmed by olive oil and pasta, so I added a few things: extra garlic, one extra tomato, a half bunch of sauteed asparagus, and some balsamic vinegar and salt and pepper to taste. This made it much better and more satisfying as a main dish. Next time I will make these same changes, but also reducing the olive oil to perhaps 3/4 cup and adding some raw red bell pepper.

Vegan Mexican Stew

Quick, easy and very tasty! I used the one-pot method suggested by another reviewer. The only other things I did differently were 1) omitted the seasoned salt (I didn't have any) and 2) used a can of plain diced tomatoes and a can of green chilies because I did not have the tomatoes with chilies already in them. Everyone loved it and had seconds. This is a keeper!

Vegan Split Pea Soup I

Everyone loved this soup. I made it exactly according to the directions with one exception: I added 2-3 T vegetable base (Better Than Bouillon brand) during the last 30 minutes of cooking to pump up the flavor. Served with homemade croutons.

Traditional Style Vegan Shepherd's Pie

This was soooo delicious! My only substitutes were rice milk instead of soy milk (was good, but want to try hemp milk next time) and rice "cheddar" instead of soy "cheddar". Potato mixture was a bit too liquid and "beef" crumbles were too crumbly. Will make adjustments for these next time. Thank you for this amazing vegan recipe!

Best Bread Machine Bread

This is excellent bread machine honey wheat! To better proof the yeast, I add 1 tsp sugar to the water and yeast. To make this completely vegan, I substitute the same amount of blue agave syrup for the honey. Yum!

Simple Ranchy Breaded Fish Fillets

I generally followed the consensus on this recipe by dredging the fish fillets in flour, dipping in egg white, then in (plain) breadcrumbs with Ranch powder and baking at 425 for 20 minutes. Not bad, but it's not a recipe I'll be making a point of doing again.

Wonderful Banana Cake

I was looking for a quick and easy banana bread recipe, so I followed what another reviewer did and baked in mini bread-loaf pans. It was pretty good, but most people were expecting bread because it looked like bread. I believe it would be much better as a cake with chocolate frosting, as pictured.
