Banana Pudding IV

I made this tonight and oh my goodness! It is so delicious! I only had one small box of vanilla pudding mix, so I used that and 2 c. milk. I also used low fat sweetened condensed milk and it is still very rich. Easy to make, but tastes like you worked on it all day! I also put the banana slices in some lemon juice to keep them from browning while mixing the pudding.

Good Ol' Alabama Sweet Tea

Someone said it was too much sugar for 1/2 gallon of tea. It isn't supposed to be just 1/2 gal when finished. You are supposed to make the tea with 1/2 gallon water and THEN once the tea is done, fill it up the rest of the way---to one gallon--- with water.

Homemade Chewy Granola Bars

Very good recipe! They reminded me of something I had tried before, but couldn't remember what it was until a day later. They reminded me of the no bake cookie with the oats and peanut butter. This is so much cheaper than buying the super small, overly sweet bars in the store. Thanks for a great recipe!

Apple Crisp II

This was very good and satisfied my craving for something sweet and oaty. I didn't melt the butter. I cut it in so the mixture would be crumbly. I also added some extra oats. I may have cooked mine a little too long because my apples were almost too soft like applesauce, but it was still delicious. I like the topping best anyway!

Lime Chicken Soft Tacos

These were absolutely fabulous!! I didn't have the red wine vinegar so I used a mixture of balsamic vinegar and white cooking wine to make 1/4 c. We cubed the chicken and ate them on soft tacos fajita style with rice, cheese, salsa and jalapeno slices. I also used cilantro instead of oregano. My 8 yr old even loved this. This will definitely go into our food rotation. Thank you for a great recipe! *update* 5-5-09 We eat this all the time and it is so quick and delicious! I use bottled lime juice and it tastes just as good to me. We just can't get enough of it even months later. Thanks so much for this delicious recipe!

Oat Waffles

These were very good! I put the oats in my blender and it worked very well turning it into oat flour. I used 1 whole egg + 1 egg white to lower the cholesterol a bit and they still turned out excellent.

Banana Banana Bread

This is a wonderful recipe! My bread baked for 50 minutes and it was perfect. I added a little vanilla extract and a dash of allspice for some extra flavor. This one is a keeper!

Fudge Brownies I

These are sooooo yummy! I used 2 eggs and they came out nice and fudgy. I made them a second time and used a substitute for the chocolate squares. 1oz square = 3 Tbs cocoa powder + 1 Tbs oil. It comes out to 12 Tbs cocoa and 4 Tbs oil. These also turned out fabulous! If you like fudgy instead of cakey, this is the recipe for you!

Portuguese Sweet Bread I

Mine didn't turn out so good, but I did change some of the ingredients. I don't like to use oil, so I replaced it with melted margarine. The bread was rubbery in texture and it was dry. I will try it again and follow the recipe exactly next time and see what happens. I've been looking for a simple bread recipe and I'm not giving up yet!

Soft, Moist and Gooey Cinnamon Buns

These were very good. I just had a couple of issues that were probably my fault. They didn't rise as much as I would have liked, but I may have proofed the yeast for too long. Then the brown sugar came out and ran into the bottom of the pan while they were rising. No biggie though because they were still soft and gooey just the way I like them. I used the cinnabon cream cheese icing and it was delicious! I will try these again and see how they turn out next time! ***update*** These made enough for me to have 3 round pans. The second pan I let rise overnight in a cold oven and they were perfect. The brown sugar did not seep out either. These are absolutely wonderful!!

Chicken Breasts Pierre

This was very good! My Husband really liked it. The stewed tomatoes made it seem a little sweeter than I would like so maybe I'll try plain whole tomatoes next time and cut them up. It was easy to fix too! Thanks for a great recipe!
