Red Lentil Curry

Very good. I used a mild curry paste, I think next time, I'll use hot. The only trouble I had was cooking the lentils to the right consistency. I ended up throwing out the first batch as they had cooked too long and were complete mush. I got it right the second time. However, the dish was still a bit too thick. Next time, I'll add some vegetable stock to the onion/spice mixture before adding the lentils right at the end.

Basil Cream Chicken

I've made this 3 or 4 times. I leave out the pimentos (cause I just don't like 'em) and sautee about 3 cloves of minced garlic in the butter before cooking the chicken. I use Italian bread crumbs for the coating. Also, I double the sauce. Great over Penne or thin spaghetti. I've gotten compliments and recipe requests each time I've made this.

Coconut Cake IV

My new favorite cake! I've made cupcakes with this twice. The first time I made a coconut cream cheese frosting which was a bit much. The second time I used chocolate frosting - delicious! My 3 year son prefers them plain and will eat 3 cupcakes in a row. People who said they didn't like coconut loved these. Amazing, wonderful flavor and texture!

Brownie Biscotti

These turned out beautifully! I read the comments about the oven temperature issues and the biscotti being too soft. So, I followed the suggestion of turning the temp down to 350 on the first bake and 300 on the second. After flipping the cut biscotti on the second bake (after 8 minutes) I baked the other side for 10. It seemed like the biscotti was too soft, so I turned the oven off and left them in for another 5 minutes. They came out the perfect consistency. Took them to work and they were gone in a couple of hours. Good stuff!

Beef Bourguignon I

This is one of the finer recipes on this site. It takes patience and dedication to prepare, but the results are simply outstanding. My dad grew up in France, and he used to make a version of this dish that was very good as well. I made this for him a month ago and he just loved it. I usually serve this with red potatoes (skins on) smashed with butter and fresh chopped parsley). Very good with the French bread rolls on this site.

Wow, this is a new favorite that will be in regular rotation. My children and I loved it. And it's so hearty - what a great way to get them to eat veggies. Just a really lovely, delicious blend of flavors.

Curried Coconut Chicken

Even though I screwed this up a bit, it was still fabulous. I used too much tomato sauce and ended up adding sour cream to thicken it a bit. I also added more garlic (minced) and some red curry paste for a little extra kick.

Crispy Orange Beef

I made this last night and am eating the leftovers right now. I added about 3 tsp of chili paste for heat and it's just about perfect. I did triple the sauce - the only other thing I'll change next time is to add a little less vinegar. Somehow, I added too much and it's a tad more sour than it should be.

Kung Pao Chicken

I have made this 3 or 4 times. I quadruple the sauce - it is very hot, but so good. My daughter and I get a craving for it every few weeks. Making it again tonight & I can't wait!

Irish Cream Chocolate Cheesecake

I made this last weekend. There was some cracking, but I covered it by making a chocolate glaze and drizzling it over the top (unsweetened Baker's chocolate, butter, sugar & milk). It made the cake more chocolate tasting, but it was fabulous. I also upped the Irish cream as recommended to 1/3 c.
