About this Cook
Married to my soulmate, I love my job, I love my life and thank the Lord every day, have teenage daughter (9 out of 10 a'int bad lol). As I've grown older I have discovered my love of cooking. I love to take standard recipes and alter them for lo-cal and lo-sodium cooking. I also love to read other reviewer's comments and suggestions on published recipes, take some into consideration, toss others and then come up with my perfected version LOL.
My favorite things to cook
Salads. Always watching our weight and trying to eat healthily (we are in our late 40's-50), I like to create salads...using chicken, beef or shrimp and lots of veggies, cheeses, nuts, fruit, etc...that, a glass of white wine and maybe a baguette. Yum. I also have a glass or two of wine handy for my cooking activities! :)
My favorite family cooking traditions
Bunny cakes at Easter, Roasted Turkey for Thanksgiving, Prime Rib for Christmas. Regular Summer BBQs...Making memories.
My cooking triumphs
Strawberry Pie with Shortbread crust (all on this site), Beef & Chicken fondue, Beef tacos, all cookies. This, per my family. I have also perfected my version of chicken cordon bleu, whole roasted chicken, quiches, and a few others.
My cooking tragedies
Not measuring baking ingredients precisely- flat cookies, flat cakes, etc. I've also left the giblets in the turkey quite a few times. My Mom's dog has eaten the Thanksgiving turkey and Bunny Cakes on numerous occasions.

Classic Caramel Corn
I used 1 bag microwave popcorn and 1/2'd the recipe. Added lots of peanuts!

Irish Soda Bread
Wonderful recipe. Recommendations: Use 3 full cups raisins, 65 minutes at 350 conv oven. Didn't have caraway seed. Suggest dusting with sugar instead of flour. Used a 9" cake pan - puffed up well.

Broccoli Beef I
Very bland, even though I added more garlic, ginger, onions, pepper flakes and black pepper. I used cornstarch instead of flour and won't do that again. The cornstarch breaks down when you 'simmer' too long and the sauce gets too runny.
