New Wife Tuna Salad

Good, but you know, to me, it tasted like pretty basic tuna salad, not anything different from what I've tasted befofre. I always make tuna salad the same way, so it tastes much different from what I usually do (which is very basic) but it tastes similar to prepackaged tuna salad, only chunkier. Which is fine if that's what you're going for! Don't get me wrong, it's good and I enjoyed it, but I didn't think it tasted diffewrent from many other tuna salads.

Blackberry Yummies

They tasted like blueberry muffins, just maybe a little more cakey, and more blackberry-y of course. They weren't bad, but they weren't anything super special either. I did like the punch of flavor the blackberries added, and I tried blackberries in my banana bread, which was very good!

Cucumbers with Dressing

I thought they were pretty yummy, I liked the strong vinegary taste, but that's just me The only problem I had was the 'dressing' was really runny. it might have been that my measurements were off, but I really enjoyed the flavors, and ate the whole bowl, even though they WERE strong.

Chayote Squash Side Dish

First time cooking this squash, so I am not sure how I should rate it. I did it according to the recipe, but the flavors just didn't really do it for me. My boyfriend didn't really eat his either. I'm not sure though if I cooked them right, because, as I said, I've never really made this squash before. They were pretty firm. I might experiment with the squash again but with different flavors.

Rosemary Carrots

Blah, just kind of boring. I used dried rosemary, and that might be part of it, and i used chicken stock because I didn't have chicken boullion, (added the stock to the carrots as they were cooking.) Maybe it was these changes, but it was just boring.

Peanut Butter Banana Bread

I made these into muffins and forced my bf to try one (not really much trouble, he likes banana bread) They were good, I thought they had lots of peanut butter flavor, and needed more banana, but I'm not the hugest peanut butter fan. My boyfriend however, loves peanut butter and thought they didn't really taste like peanut butter at all, but like regular banana muffins, so...the jury's still out. =P. They are good, I just thought they would have a better balance of flavors, whereas they really tasted VERY peanutbuttery to me. However, you may really like them!

Citrus-Ginger Tuna Steaks

The bf and I loved them, marinated a few hours and ended up taking the marinade, adding orange juice, brown sugar and a little chili pepper to make a sauce. I also used all lemon juice instead of lime juice, as I don't normally keep limes or lime juice on hand and this recipe was a spur of the moment kind of thing. I also do NOT sear, I cook my steaks all the way through. I've never been a sushi person and I don't like raw fish. They taste perfectly fine both ways I am sure, and were delicious the way I prepared them with only a slight amount of pink in the middle.

Spicy Sweet Potatoes

These were all right. I probably halved the recipe, because I didn't have so much potato, and used it on both white and sweet, but the potatoes turned out soggy, even though I followed the recipe. The only difference was I didn't use cayenne, just extra chili powder. I probably should have used the cayenne because the chili powder wasn't very strong (for me) by itself and the potatoes didn't have asm uch flavor as I would have likedc. Probably would have helped if they were crispy! Next time I may not even use the olive oil.

Brilliant Sauteed Broccoli

It was ok, I ate it, but I probably won't eat it again. I'm not sure what it was about it that I didn't like...the technique was ok, but the flavors were just ok. Cheese is a good idea for broccoli though and I may try it in another way later.

Carrot Cake III

I know there are a million reviews for this cake, and I don't know if anyone will care to read mine but i do want to say it is delicious. I wouldn't really change anything. I've never made carrot cake before, so i made it exactly as instructed. And it was fine! You can substitute things to make it slightly healthier, as you can any other food, but don't feel like you need to go crazy. I used a slightly different icing recipe that called for a little less sugar ( i like my icing more cream cheesy) but there is one thing I did that set my boyfriend (who is carrot cake crazy) over the edge: I coated the iced cake with heath bar bits (which are just toffee bits) that you can buy in a bag in the grocery store by the chocolate chips. They add a pleasant crunch (which were missing in my cake because I didn't have any nuts =( and tasted really good! The only other thing I would add is maybe a pinch of nutmeg. Also would recommend grating the carrots in small slivers so there aren't necessarily big pieces of carrot. Really good recipe!!! Will make it again and again.

Cream Cheese Frosting II

Absolutely delicious! No changes necessary! It is very cream cheesy, but this is the way I like it, so if you do like your cream cheese icing more sweet, you might add more sugar. I added a tad bit more vanilla, just because I like vanilla. =) Also try adding other flavor extracts for a change (like orange. :) I used this for carrot cake and a good tip that my boyfriend really liked was sprinkling heath bar bits (you can buy them in a bag next to the chocolate chips in the cooking aisle) over the top of the icing.

Coriander and Cumin Rubbed Pork Chops

Fry Bread Tacos II

Ok, so I'm reviewing the bread, like everybody else. i was going to make the whole taco, but my plans changed. Anyways. The bread is delicious and easy to make. I haven't tried it yet for dessert, but it is good even plain, or with herbs and dipping oil. My only problem with it is that I have trouble making it flat enough. It puffs up a lot in the oil so you have to roll it out as thin as possible, and even then it seems to puff up quite a bit. Also i don't see how it could be used to wrap up a taco without breaking. It is soft, but not pliable, so I don't see how it could be used as a 'chalupa' bread. But this is just my experience. But all that said, it really is quite good!

Flat Iron Steak with Three Pepper Rub

My boyfriend liked this, but all I could really taste was the chipotle/paprika. However because he liked it, I gave it three stars. I think it was good, but not great. I think next time I will use less paprika.

Maple Salmon

This salmon was ok... I rated it three stars because it wasn't terrible but wasn't great either. It didn't have a super strong maple flavor, but most of the flavor seemed to have run off the salmon and what was left was slightly sweet but otherwise a little bland. I might have done something wrong to make it that way, but no one in my family is crazy enough about maple to really warrent a second try. Maybe if I had made a thicker maple sauce it might have been good!

Sweet Simmered Pork Chops

I am rating this for the sauce. Pork chops are pork chops, but the sauce is soo good. Whenever I make my own sauce I put Dr. Pepper in it now. The sauce is so sweet but yummy. My boyfriend raved and raved over the sauce and how much he liked it.

Pork and Bean Bread

I am giving this bread the lowest rating I could because it is the most bland bread I've ever tasted. I made exactly to the instructions and it just tastes like nothing to me. It was a little dry, but that could have been execution on my part. However there's no reason the bread should have been so bland when I followed the directions exactly. They don't taste like beans, but thwey don't really taste like cinnamon or anything either. I ended up throwing the loaf out. I think you'd be better off pureeing the beans and putting them in another type of bread. It is a good idea for a hidden source of fiber etc, but not flavor!

Sweeter Muffins

I rated these four stars because while they are very plain (with a hint of sweetness) they are actually a nice bread addition to a meal without stealing the limelight. We spread honey butter on ours and enjoyed them with dinner. For those wondering what they taste like...they taste very similar to corn bread, but less corny. But they are simply and yummy!

Rainbow Clown Cake

Made this with my boyfriend's ten year old daughter, and she had sooo much fun making it. We used like four different colors and then colored the icing as well. It all got eaten, and everybody enjoyed it. We mixed whipped icing with marshmallow fluff, and put that in the middle of two layers. The easiest thing to do is make the cake accordingto the directions on the box, then follow directions in this recipe. We used gel food coloring and it worked fine, although it's hard to measure the colors. (We had a purple that was kind of muddied.) Other than that it was a great success. =)
